ORZO SALAD WITH PEPPERS AND FETA

Orzo Salad With Peppers and Feta image

Piperade, a classic Basque dish of stewed peppers, onions and tomatoes, becomes a flavorful sauce for this pasta. Colorful bell peppers simmer in olive oil and aromatics until meltingly soft, and juicy tomatoes simmer alongside until they burst, lending both tangy and sweet notes. Briny feta adds salty bites to complement the sweet pepper sauce, but tart aged goat cheese makes a good alternative. This side is even better at room temperature, making it the perfect make-ahead dish for summer picnics or potlucks.

Time 30m

Yield 4 to 6 servings (about 10 cups)

Number Of Ingredients 11

1 pound orzo
Kosher salt and pepper
1/4 cup extra-virgin olive oil
1 medium yellow onion, thinly sliced (about 1 1/2 cups)
3 large or 4 medium red, yellow or orange bell peppers (about 1 1/4 pounds), cored, seeded and chopped into ½-inch pieces (about 4 cups)
1 fresh thyme sprig
1 tablespoon minced garlic
1 medium tomato, diced into 1/2-inch pieces
1 tablespoon fresh lemon juice
1/4 cup chopped fresh basil, plus more for garnish
4 ounces feta cheese, thinly sliced or crumbled

Steps:

  • Cook orzo in a large pot of salted boiling water according to package directions until al dente. Reserve 1/4 cup of the pasta cooking water, then drain the pasta, pressing out excess liquid. Spread out on a baking sheet to cool.
  • Meanwhile, in a large skillet, heat oil over medium. Add onion, bell peppers and thyme, and season with salt and pepper. Cook, stirring occasionally, until tender, about 10 minutes. Stir in garlic until fragrant, about 1 minute. Add tomato and cook, stirring occasionally, until broken down and juices release, about 8 minutes.
  • Add the reserved pasta water and stir to scrape up any browned bits at the bottom of the skillet. Transfer vegetable mixture to a large bowl to cool slightly to lukewarm, about 5 minutes, stirring occasionally to speed up the cooling process. Discard thyme sprig.
  • Add cooled orzo, lemon juice, basil and cheese. Season to taste with salt and pepper. Mix well, then transfer to a large serving bowl or platter. Garnish with more basil.

"I love green peppers but my husband does not, so I created this dish one night when he wasn't home. It includes all my favorite things," writes Jennifer Tarr of Baltimore, Maryland. "When the two of us are here, I leave out the peppers and add the veggies my husband prefers."

ORZO WITH SAUSAGE, PEPPERS AND TOMATOES

Orzo with Sausage, Peppers and Tomatoes image

Provided by Giada De Laurentiis

Categories     main-dish

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 14

1 red bell pepper
1 orange bell pepper
1 pound orzo pasta
3 cups chicken stock
3 cups water
1 tablespoon kosher salt
2 tablespoons olive oil
7 ounces (2 links) mild Italian turkey sausage, casings removed
1 clove garlic, minced
2 plum tomatoes, chopped
1/4 teaspoon red pepper flakes, optional
2 tablespoons chopped fresh flat-leaf parsley
Salt and freshly ground black pepper
1/2 cup ricotta salata cheese, crumbled

Steps:

  • Using tongs, place the bell peppers over a gas flame. Cook, turning occasionally, until the skins are charred on all sides, about 5 to 6 minutes. (Alternatively, place the peppers on a baking sheet and broil for 5 to 8 minutes, until charred.) Place the charred peppers in a medium bowl. Cover the bowl with plastic wrap and allow the peppers to steam for 20 minutes. Under running water, peel away the charred skin from the peppers. Pat the peppers dry with paper towels. Remove the stem and seeds from the peppers and cut into 1/4-inch thick slices. Set aside.
  • In a medium saucepan, bring the chicken stock, water, and kosher salt to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes.
  • While the pasta is cooking: In a large skillet, heat the oil over medium-high heat. Add the turkey sausage and saute until cooked through, about 4 minutes. Add the garlic and cook for 1 minute. Add the bell peppers, tomatoes, and red pepper flakes, if using, and cook until heated through, about 2 minutes.
  • Drain the pasta, reserving about 1/2 cup of the cooking liquid, and transfer to a large serving bowl. Add the sausage mixture, 1 tablespoon of the parsley, and season with salt and pepper, to taste. Toss well to combine all ingredients, adding reserved cooking liquid, if needed, to loosen the pasta. Top with the ricotta salata and sprinkle with the remaining parsley. Serve.

This dish looks beautiful and tastes like you cooked all day. Any combination of green, yellow, and red peppers works well; I use all three for color. You can also use low-sodium chicken broth and Smart Balance® spread.

ORZO SALAD WITH SHRIMP AND DOUBLE PEPPERS

Orzo Salad With Shrimp and Double Peppers image

I've had the recipe for many years and it always receives raves and recipe requests. It has a tantalizing oriental flavor. Colorful, elegant, and easy to prepare. I tend to cut down on the orzo and increase more of the "good stuff".

Provided by Marietta Mary Lou

Categories     Lunch/Snacks

Time 30m

Yield 3-4 serving(s)

Number Of Ingredients 12

1 cup orzo pasta
1 1/2 lbs cooked shrimp
1 sweet red pepper, julienned
1 cup snow pea pods, blanched
1 bunch green onion, 1/4 ed lenghtwise and into 2 inch lengths
1/4 cup rice vinegar
1 tablespoon Dijon mustard
1/2 teaspoon dried red pepper flakes
1/2 cup canola oil
2 -3 tablespoons sesame oil
sesame seeds (optional)
1 tablespoon soy sauce

Steps:

  • Prepare orzo according to pkg directions.
  • Drain.
  • If using large shrimp (recommended), slice them in half lengthwise so there are 2 equal halves.
  • Combine all salad ingredients.
  • Combine dressing ingredients, whisking thoroughly.
  • Adjust to your taste and combine with salad ingredients.
  • Chill several hours, stirring occasionally.

Tips:

- Use a large skillet or pot to cook the orzo and peppers, as you want the vegetables to have enough space to brown and caramelize. - Don't overcrowd the skillet or pot, or the vegetables will steam instead of browning. - Cook the orzo according to the package directions. - If you want the orzo to have a bit of a bite to it, cook it for a minute or two less than the package directions. - Season the orzo and peppers generously with salt and pepper. - Add a splash of white wine or chicken broth to the skillet or pot to deglaze the pan and add flavor. - Stir in some fresh herbs, such as basil, oregano, or thyme, at the end of cooking for a pop of freshness. - Serve the orzo and peppers with a side of grated Parmesan cheese.

Conclusion:

Orzo and peppers is a quick and easy dish that is perfect for a weeknight meal. It is also incredibly versatile, as you can add any vegetables or protein that you like. So next time you are looking for a simple and satisfying meal, give orzo and peppers a try.
