1/2 cup soy sauce
2 teaspoons olive oil
1 teaspoon sesame oil
1 teaspoon crushed red pepper flakes (you may want to start with less)
1 teaspoon minced garlic
1 teaspoon sriracha hot sauce (Thai hot chile sauce marked Tuong Or Sriracha on the label)
1 (16 ounce) package spaghetti or 1 (16 ounce) package fettuccine
2 cups shredded napa cabbage
1 cup shredded carrot
1/2 cup diced red pepper
1/2 cup chopped cilantro leaf
2 cups shrimp or 2 cups beef (optional)
salt, to taste

Steps:

  • For Vinaigrette: In a bowl, whisk together the soy sauce, olive oil, sesame oil, crushed red pepper, garlic and Sriracha hot sauce.
  • Set aside.
  • For Noodles: Bring a large pot of water to a rolling bowl, add salt to taste, then add noodles and stir.
  • While noodles are cooking, prepare the cabbage, carrots, red pepper, cilantro and chicken, shrimp or beef.
  • When noodles are done, drain and immediately pour into a large bowl.
  • Add vinaigrette, vegetables and meat or fish; stir to combine thoroughly.
  • Serve.
  • Note: In testing, low-sodium soy sauce and whole-wheat pasta were preferred.

1 9-10oz package soba noodles
1 english cucumber cubed
1 c carrots cut
1 Tbsp sesame oil
1/3 c lite soy sauce
1/4 c rice vinegar
1/3 c finly chopped cilantro
3 garlic cloves minced
2 Tbsp brown sugar
1 tsp red pepper flakes
juice of one lime
1 1/2 tsp sesame seeds

Steps:

  • 1. Cook soba noodles according to package, rinse in cold water. Add carrots cucumbers and cilantro and set aside.
  • 2. In a bowl whisk together rest of ingredients, except for sesame seeds and pour over noodles and veggies. Sprinkle with sesame seeds, cover and refrigerate for at least 2 hours.

2 tablespoons sesame oil
2 tablespoons seasoned rice vinegar
1 teaspoon minced ginger
1/2 teaspoon minced garlic
1/4 teaspoon red pepper flakes
8 cups water
1 (10 ounce) package curly chinese noodles
1 (8 ounce) package imitation crabmeat
6 ounces fresh snow peas (1 1/2 cups) or 6 ounces fresh sugar snap peas (1 1/2 cups)
1 red bell pepper, cut into strips
1/4 cup green onion, thinly sliced

Steps:

  • Mix the ingredients together for the dressing & set aside.
  • Bring the water to boil in a large pot. Add the noodles & return to a boil, cook 2 minutes.
  • Add the crabmeat & peas, cook for another minute or until noodles are al dente.
  • Drain the noodle mixture then toss in the dressing. Arrange the noodle mixture on salad plates the sprinkle with green onions.
