Time 50m

Yield 1 quiche, 4-6 serving(s)

Number Of Ingredients 13

1 (9 inch) refrigerated pie crusts, thawed according to package directions
1 1/2 cups fresh sweet corn
1 cup canned black beans, rinsed and well drained
1 cup quartered grape tomatoes
1/2 cup chopped green onion
6 eggs
1/2 cup heavy cream
1 1/2 cups shredded monterey jack cheese
1/2 teaspoon fajita seasoning mix
1/2 teaspoon kosher salt (to taste)
Reynolds Wrap Foil
2 tablespoons chopped fresh cilantro
prepared store-bought salsa, if desired

Steps:

  • Prepare refrigerated pie crust, in a 9 inch tart or round pan, according to package directions for a single, prebaked pie crust.
  • Meanwhile, in a large bowl, combine corn, black beans, tomatoes, and onions. Toss to mix. Set aside.
  • In another large bowl, whisk together eggs and cream. Stir in cheese, taco seasoning, and salt. Set aside.
  • Tear a piece of Reynolds Wrap Foil 1/2 inch larger than diameter of tart pan. Fold foil in half; cut out a half-circle so that when laid flat, the opening will fit the diameter of the tart but cover edges. (This will allow egg mixture to cook and prevent overbrowning of edges at the same time!).
  • Arrange mixed vegetables in bottom of prebaked pie crust. Pour egg-cheese mixture over vegetables. Place opening of foil over quiche; fold edges over pan, covering pie crust edge. Bake 20-22 minutes or until egg has set completely.
  • To serve: Remove foil. Sprinkle quiche with cilantro. If desired serve with prepared salsa. Serve warm.

MEXICAN STACK-UP #RSC

Mexican Stack-Up #RSC image

Ready, Set, Cook! Reynolds Wrap Contest Entry. This recipe combines traditional Mexican flavors and creates a fun "stack up" meal. It uses Reynolds Wrap Aluminum Foil to steam off the skin of the poblano pepper, as well as tent the dish while baking. This can be served as a main dish casserole or a yummy appetizer if sliced into small pieces.....great football food. Six servings as a main dish casserole or 12-15 appetizer sizes. If you like things hotter, add some diced jalapenos and garnish with jalapenos as well. Enjoy!

Time 1h15m

Yield 2 Stacks, 6 serving(s)

Number Of Ingredients 22

1 poblano pepper
Reynolds Wrap Foil
2 tablespoons olive oil
4 green onions, sliced thinly
4 garlic cloves, finely chopped
1 1/2 lbs ground beef
3 1/2-4 tablespoons taco seasoning mix, to your taste
1 pinch cayenne pepper
1 cup canned black beans, drained
2/3 cup corn kernel, fresh
8 ounces cream cheese, room temperature
1/3 cup chicken stock
2 tablespoons chives
1 tablespoon fresh cilantro, chopped
salt and pepper
8 corn tortillas
1 1/2 cups sharp cheddar cheese, grated
1 1/2 cups monterey jack cheese, grated
sour cream
green onion, sliced
black olives, sliced
jalapeno, sliced

Steps:

  • Preheat broiler to high broil. Set the rack 6 inches from the heating element. Place the poblano pepper on a baking sheet and broil for 4 minutes on each side, or until the skin is blistered and rising up.Watch closely so you don't scorch your pepper. Remove from the oven and place the poblano pepper on a sheet of Reynold's Wrap aluminum foil and wrap loosely to allow the pepper to steam for 10 minutes.
  • Turn the broiler off and preheat the oven to 350 degrees. Add olive oil to a large skillet and heat over medium heat. Add the green onions and cook for 1 minute, then add the garlic and cook for 1 minute. Add the ground beef and cook until no longer pink. Drain all grease from the pan, using a paper towel to soak up any extra grease.
  • While the onions and meat are cooking, remove the poblano from the Reynold's Wrap aluminum foil and let cool a bit. Peel the skin from the poblano and dice.
  • Add the chicken stock, taco seasoning, cayenne pepper, diced poblano peppers, black beans, corn, cilantro, cream cheese and chives to the skillet. Cook while stirring until it is creamy. Taste and add salt and pepper as you feel is needed. Remove from heat.
  • Choose a casserole dish that is at least 2 1/2 inches to 3 inches deep and can hold 2 stacks of 5 inch corn tortillas. Otherwise, you can make two separate casserole dishes. Spray with oil and place 2 corn tortillas (making 2 stacks!) in the casserole dish. Spread 1/4th of the meat mixture on top of the two tortillas. Top with 1/4 of the cheese. Repeat this step 3 times, ending with cheese.
  • Loosely tent your casserole dish with Reynolds Wrap Aluminum Foil. Use no stick Reynolds Aluminum Foil if you are afraid your cheese will attach to the aluminum foil. Bake at 350 degrees for 20 minutes. Remove the Reynolds Wrap Aluminum Foil and bake for an additional 15 to 20 minutes. Let the dish sit for 5 minutes before slicing and serving. Enjoy!

Time 35m

Yield 4 serving(s)

Number Of Ingredients 9

2 slices bacon
4 ears fresh corn
1 red bell pepper, large diced
2 zucchini, cut in 1/2 inch slices
1/2 cup onion, diced
1 teaspoon cavender's all purpose Greek seasoning
black pepper, freshly ground
Reynolds Wrap Foil
4 tablespoons butter

Steps:

  • Preheat your oven to 400 degrees. Place the bacon on the rack of a broiler pan and bake for 10 to 20 minutes, depending on the thickness of your bacon. You want it crisp but not burned.
  • While baking the bacon, scrape the corn off the ears of corn. Combine the corn kernels, red bell pepper, sliced zucchini, and diced onion in a bowl. Sprinkle the Cavender's Greek Seasoning over the vegetables. Add some freshly ground black pepper if you would like.
  • Tear off 2 12 x 12 pieces of Reynolds Wrap Aluminum Foil. (I like to use heavy duty for grilling). Place half the vegetables on each foil sheet.
  • Cut the butter up into small pieces and put 2 tablespoons over each vegetable packet. Bring the ends of the foil together, fold over 3 times and twist the ends together. (Each packet serves two).
  • Grill over hot coals for 15 - 20 minutes. While the veggies are grilling, crumble the bacon. When the veggies are ready, carefully open the packets (watch out for steam!) and sprinkle a slice of crumbled bacon over each packet. Serve and enjoy!

MEATBALLS IN A SWEET 'N SPICY ASIAN SAUCE WITH WARM ASIAN SLAW

Meatballs in a Sweet 'n Spicy Asian Sauce With Warm Asian Slaw image

This is a great way to take a classic meatball and make it a little modern with an Asian sauce instead.....trust me......everyone will love them! I made yet, another batch of my quick and delicious Nana's Meatballs. I love making a recipe that I can use in different ways. I used half of the meatballs to have with a traditional red sauce over pasta and the other half with the Asian Sauce. I had two totally different dishes. I like serving the Spicy Asian Meatballs as an appetizer on top of a bed of this delicious Warm Asian Slaw. The next time you want to make meatballs, surprise your family and friends with a little something different. Enjoy!

Tips:

  • Mise en Place: Before you start cooking, make sure you have all your ingredients prepped and measured out. This will help you stay organized and ensure that your cooking goes smoothly.
  • Use Fresh Vegetables: Fresh vegetables will give your packets the best flavor and texture. If you don't have fresh vegetables on hand, you can use frozen vegetables, but make sure to thaw them before using.
  • Don't Overcook the Meatballs: The meatballs should be cooked through, but not overcooked. Overcooked meatballs will be dry and tough.
  • Use a Variety of Vegetables: Don't be afraid to mix and match different vegetables in your packets. This will give you a variety of flavors and textures.
  • Season to Taste: Be sure to season your packets to taste. You can add more salt, pepper, or other seasonings to taste.

Conclusion:

Oriental meatball veggie packets are a delicious and easy way to get your daily dose of vegetables. They're also a great way to use up leftover rice and meatballs. With a little planning, you can have a healthy and satisfying meal on the table in no time. So next time you're looking for a quick and easy meal, give oriental meatball veggie packets a try.
