1 lb of your favorite pasta, cooked per package diections and drained (you can also use linguine for this one. YUM)
1 1/2-2 lbs boneless skinless chicken breasts, cooked and cut into 1 inch cubes
2 cups frozen baby peas, thawed
1 carrot, peeled and sliced
1 red bell pepper, cored and cut into julienne strips
4 green onions, chopped
1/2 cup light soy sauce
1/4 cup canola oil
1/4 cup rice wine vinegar
2 tablespoons sesame oil
1 tablespoon garlic, minced
2 tablespoons dark brown sugar
1 tablespoon fresh ginger, grated
2 drops hot chili oil
2 tablespoons sesame seeds

Steps:

  • In a large bowl, combine the cooked pasta, cooked chicken, peas, carrots, red bell pepper and green onion.
  • In a small bowl, whisk the soy sauce, canola oil, rice wine vinegar, sesame oil, garlic, brown sugar, ginger and chili oil.
  • Pour over chicken pasta mixture and toss to combine.
  • Sprinkle on the sesame seeds.
  • Cover and refrigerate 2 hours before serving.

LOVE ORIENTAL CHICKEN SALADS AND WANTED A COOL VERSION FOR PICNICS. IT'S ALWAYS A HIT. YOU CAN ADD OR SUBTRACT ANY VEGGIES YOU DON'T LIKE. IN THE PHOTO IT SHOWS CUCUMBERS BUT THE LONGER IT SITS THE CUCUMBERS GET SOGGY. ADD JUST BEFORE SERVING.
2 medium chicken breasts, boneless and skinless
8 oz rotini pasta cooked
1 c carrots, grated
1/2 c edamame removed from shells
3 green onions sliced
1/2 c red onion chopped
2 c red cabbage, shredded
2 c snow peas chopped
1 c asian oriental salad dressing
1 Tbsp honey
2 tsp soy sauce
chow mein noodles

Steps:

  • 1. Place cubed chicken breasts in ziplock bag and dust with Corn Starch. Set aside and cook pasta according to package directions, drain and rinse in cold water.
  • 2. chop veggies and place in large bowl. Once pasta is cooked and cooled add to veggie bowl. In skillet put in oil and add chicken dashing soy sauce on top. The corn starch adds a slight crispness.
  • 3. While chicken cooks, in bowl add salad dressing, honey & soy sauce. Mix well. Taste to see if you need more honey or soy sauce.
  • 4. Once chicken is cooked, cool slightly than add to pasta and veggies.
  • 5. Pour over dressing mixture and toss. Chill for 4 hours or overnight. I always do overnight as it lets the flavors soak in and meld. Top with chow mein noodles just before serving.

5 chicken breasts, cooked and cubed
1 lb bow tie pasta, cooked
1/2 lb snow peas, blanched 3 minutes
1 red pepper, chopped
3 green onions, sliced
1 can sliced water chestnut
1 cup slivered almonds, toasted
1/2 cup mayonnaise
2 tablespoons soy sauce
2 tablespoons parsley
1 teaspoon dry mustard
1 teaspoon fresh ginger or 1/2 dried ginger
salt and pepper

Steps:

  • Combine all salad ingredients and toss with dressing.
  • Refrigerate at least overnight before serving.
  • I also recommend making a second batch of the dressing and tossing it with the salad just before serving as the pasta soaks up most of the dressing.
