Chinese Steamed Buns with Meat Filling image

This Chinese Steamed Bun recipe has a meat and vegetable filling. The filling is best if allowed to rest in the refrigerator overnight. Use meat that is half fat and half flesh for the most tender filling. A wok equipped with a stainless steel steam plate, a plate with holes to allow steam to pass, is required to make these tasty buns.

Time 4h

Yield 24

Number Of Ingredients 12

8 ounces chopped pork
1 (4 ounce) can shrimp, drained and chopped
1 teaspoon salt
2 green onions
1 tablespoon chopped fresh ginger root
1 tablespoon light soy sauce
1 tablespoon rice wine
1 tablespoon vegetable oil
1 tablespoon white sugar
ground black pepper to taste
2 ½ tablespoons water
1 recipe Chinese Steamed Buns

Steps:

  • Cook chopped pork in a wok over medium heat. After 3 minutes of cooking add chopped shrimp if desired. Cook until pork is no longer pink. Drain, season with salt and set aside to cool.
  • Mix together green onions, ginger, soy sauce, rice wine, oil, sugar, and pepper. Stir in minced meat. Stir in water and mix thoroughly. Chill in freezer for 2 hours, or in refrigerator overnight to firm up and blend flavors.
  • Prepare dough for Chinese Steamed Buns.
  • Shape dough into balls. Roll each out into a circle, (like Won-Ton wrappers). Put 1 tablespoonful of prepared meat mixture in the center of each circle, and wrap dough around filling. Place seams down onto wax paper squares. Let stand until doubled, about 30 minutes.
  • Bring water to a boil in wok, and reduce heat to medium; the water should still be boiling. Place steam-plate on a small wire rack in the middle of the wok. Transfer as many buns on wax paper as will comfortably fit onto steam-plate leaving 1 to 2 inches between the buns. At least 2 inches space should be left between steam-plate and the wok. Cover wok with lid. Steam buns over boiling water for 15 to 20 minutes.
  • REMOVE LID BEFORE you turn off heat, or else water will drip back onto bun surface and produce yellowish "blisters" on bun surfaces. Continue steaming batches of buns until all are cooked.

Time 1h30m

Yield 6 to 8 servings

Number Of Ingredients 14

3/4 cup warm water
1/8 cup sugar
1/2 tablespoon dry yeast
1/2 tablespoon melted lard
2 1/2 cups sifted all-purpose flour
5 tablespoons water
Canola oil, to cook
1 tablespoon minced garlic
1 tablespoon minced ginger
2 cups sliced shiitake mushrooms
Salt and black pepper
2 cups ground chicken meat
1/3 cup chopped chives

Steps:

  • Buns: Mix warm water with sugar to dissolve. Add yeast and let stand for 10 minutes. Mixture should get foamy, or the yeast is dead. Mix in lard.
  • In a food processor, add flour and yeast mixture. While blade is spinning, pour in water until a ball forms. If dough is too sticky, add more flour. If dough appears dry and doesn't form a ball, add more water. As soon as a ball forms, take dough out and knead by hand on a floured surface. For 10 minutes roll dough into one long log about 2-inches thick. Cut into 2-inch pieces.
  • Filling: In a saute pan coated with oil, saute garlic and ginger. Add shiitakes and cook until soft. Season with salt and pepper. Let mixture cool.
  • Assembly: In a bowl, mix shiitakes, chicken, chives, and truffle oil. Season with salt and pepper. Keep filling chilled before stuffing buns.
  • Form thick circles and place about 1 tablespoon of stuffing in the middle of each piece of dough. Encircle stuffing with the dough, but do not seal. Let rest in a warm place for 30 minutes.
  • In a steamer basket, steam buns for 10 to 12 minutes.

Tips:

  • For the best results, use fresh, high-quality ingredients.
  • Make sure your yeast is active before using it. To test this, dissolve the yeast in warm water with a pinch of sugar and let it sit for 5-10 minutes. If the yeast is active, it will start to foam.
  • Knead the dough until it is smooth and elastic. This will help to develop the gluten in the dough, which will make the buns light and fluffy.
  • Let the dough rise in a warm place until it has doubled in size. This will help to create air pockets in the dough, which will make the buns light and airy.
  • Bake the buns in a preheated oven until they are golden brown. This will ensure that they are cooked through.
  • Serve the buns warm with your favorite dipping sauce.

Conclusion:

Oriental chicken buns are a delicious and easy-to-make appetizer or snack. They are perfect for parties or potlucks, and they can also be enjoyed as a meal on their own. With a few simple ingredients and a little bit of time, you can create these delicious buns that are sure to be a hit with everyone who tries them.
