ORIENTAL BROCCOLI SLAW

Oriental Broccoli Slaw image

This is a very good side dish to go with most any meal. It is very flavorful and has a nice crunch. It's even good on a sandwich. It's very easy to half the recipe if you don't need this large amount, but it is very good left over.

Provided by Donna Brown

Categories     Vegetables

Number Of Ingredients 12

2 bags broccoli slaw mix
2 bags oriental flavor ramen noodles, crushed
1/4 c slivered almonds
1/4 c sunflower seeds
3/4 stick butter
chopped green onion with tops for garnish
dressing mix:
3/4 cup canola oil
1/4 cup brown sugar
1/4 cup apple cider vinegar
1 packet ramen oriental seasoning mix
salt and pepper

Steps:

  • 1. Melt butter in fry pan, add almonds, sunflower seeds and ramen noodles and toast all until slightly browned. Cool. Mix oil, brown sugar, vinegar, seasoning packet, and salt/pepper in small bowl. Mix well with whisk. In a mixing bowl add broccoli slaw and cooled toasted mix. Pour dressing over, mix well. Garnish with chopped green onion/s. Refrigerate for a few hours before serving.

Tips:

  • Choose the right broccoli. Look for broccoli crowns that are deep green in color and have tightly closed florets. Avoid crowns that are yellowing or have loose florets, as these are signs of overmaturity.
  • Cut the broccoli into uniform pieces. This will help them cook evenly. If the florets are large, you can cut them in half or quarters.
  • Blanch the broccoli before stir-frying. This will help to preserve its color and nutrients. To blanch the broccoli, bring a large pot of salted water to a boil. Add the broccoli and cook for 1-2 minutes, or until it is bright green and tender-crisp. Drain the broccoli and immediately transfer it to a bowl of ice water to stop the cooking process.
  • Use a well-seasoned wok or large skillet. This will help to prevent the broccoli from sticking. If you don't have a wok, you can use a large skillet or sauté pan.
  • Heat the wok or skillet over high heat. This will help to create a nice sear on the broccoli.
  • Add the broccoli to the wok or skillet and stir-fry for 3-4 minutes, or until it is tender-crisp. Be sure to stir the broccoli constantly so that it cooks evenly.
  • Add the sauce and cook for an additional minute or two, or until the sauce has thickened.
  • Serve the broccoli immediately over rice or noodles.

Conclusion:

Oriental broccoli is a delicious and healthy dish that is easy to make. By following these tips, you can create a flavorful and nutritious meal that your family and friends will love. With its vibrant green color and tender-crisp texture, oriental broccoli is a great addition to any meal.
