2 c chopped onions
2 Tbsp olive oil
1 clove garlic, minced
1 lb fresh green beans, trimmed
1 14 1/2oz. can of diced tomatoes, drained
1/2 c vegetable or low sodium chicken broth
1 Tbsp chopped fresh oregano
1 Tbsp chopped fresh parsley
3/4 tsp salt
1/2 tsp pepper
1 Tbsp fresh lemon juice
1/2 c crumbled feta cheese

  • 1. Saute onion in hot oil in a dutch oven over medium heat 8 minutes or until tender. Add garlic; cook, stirring often, 4 minutes or until garlic is tender and golden brown.
