8 ounces uncooked orecchiette pasta
16 ounces Italian sausages (see note)
1/2 medium onion (chopped)
4 cloves garlic (minced)
1/2 teaspoon Dijon mustard
1/2 cup dry white wine
3 cups (packed) fresh baby spinach
2 tablespoons fresh basil (optional)
Salt & pepper (to taste)
For serving: freshly grated parmesan cheese (optional, to taste)

Steps:

  • Cook the pasta al dente according to package directions.

Add the onion to the skillet as well, and sauté over medium-high heat for 8-10 minutes or until it's cooked through and nicely browned. If there's more than about 1-2 tablespoons of fat left in the skillet, spoon out the excess, but be sure to leave some since we're not adding any extra butter or oil.
  • Reduce the heat to medium and stir in the garlic and Dijon mustard (cook for about 30 seconds).
  • Pour in the wine and cook until reduced by half (about 1-2 minutes).
  • Add in the spinach and basil. Toss (using tongs or two large spoons) until the spinach has wilted, then add in the drained pasta and toss again.
  • Season with salt & pepper as needed. Serve immediately with freshly grated parmesan cheese over top.

ORECCHIETTE WITH FRESH TOMATOES AND SAUSAGE

Orecchiette with Fresh Tomatoes and Sausage image

It's one of those dishes I always come back to for more. Best thing is, there is room to tweak it a bit to suit your style. The type of sausage you use will greatly affect the taste of the whole dish. I'm partial to Sicilian-style chicken sausage for this recipe. Garnish each bowl with Parmesan cheese.

Orecchiette means "little ears" in Italian. It is a small round pasta with a slight dome in the center. Campanelle pasta can be substituted, if desired. For a milder dish, mild or sweet Italian sausage can be used. Italians sausage links with the casings removed can be substituted for the bulk sausage.

Tips:

  • Use fresh, high-quality ingredients for the best flavor.
  • Don't overcrowd the pan when cooking the sausage and vegetables. This will prevent them from cooking evenly.
  • Cook the orecchiette al dente, according to the package directions.
  • Add the cooked orecchiette to the sauce and toss to coat.
  • Serve immediately, garnished with grated Parmesan cheese.

Conclusion:

This orecchiette with spinach, sausage, and tomatoes is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is packed with flavor and is sure to be a hit with the whole family.
