Provided by Niecer

Number Of Ingredients 11

Orange Vinaigrette:
INGREDIENTS
baby spinach
dried cranberries
sliced almonds, toasted
1/2 orange, juiced
1 tsp. orange zest
1 Tbsp. balsamic vinegar
1 Tbsp. honey
1/4 cup extra virgin olive oil
salt and pepper, to taste

Steps:

  • DIRECTIONS 1. To make the vinaigrette, combine the orange juice, zest, vinegar, and honey in a food processor or blender. Pulse to combine. With the motor running, slowly stream in the olive oil. Season to taste with salt and pepper. Dressing will keep for several days in the refrigerator. 2. Place baby spinach in a bowl. Drizzle with vinaigrette and toss to coat. Top with cranberries and almonds. Makes about 3/4 cup vinaigrette.

Tips:

  • Use the freshest oranges possible for the vinaigrette. This will give it the best flavor.
  • Feel free to adjust the proportions of the dressing to suit your taste. If you like a tangier dressing, add more lemon juice. If you like a sweeter dressing, add more honey.
  • The salad can be served immediately, or you can let it sit for a few minutes to allow the flavors to meld. If you let it sit, be sure to toss it again before serving.
  • For a more substantial salad, add some grilled chicken or shrimp.
  • If you don't have any orange zest, you can use 1/2 teaspoon of dried orange peel.

Conclusion:

This orange vinaigrette spinach salad is a refreshing and healthy dish that is perfect for a light lunch or dinner. The orange vinaigrette is light and tangy, and it perfectly complements the spinach, strawberries, and almonds. This salad is also a good source of vitamins and minerals, including vitamin C, vitamin A, and potassium.
