ORANGE THYME CHICKEN BREASTS
I found this recipe in an issue of Parade in January of 2005...it's pretty tasty and not too fattening. I prefer to use chicken tenders instead of chicken breasts.

Tips:
- Use a good quality orange: The flavor of the orange is key in this dish, so make sure to use a sweet and juicy variety. Valencia or navel oranges are good choices.
- Zest the orange before juicing it: This will help to release the orange's oils and give the dish a more intense flavor.
- Don't overcrowd the pan when searing the chicken: If the pan is too crowded, the chicken will not brown properly and will be more likely to steam.
- Use a meat thermometer to ensure the chicken is cooked through: The internal temperature of the chicken should reach 165 degrees Fahrenheit before you remove it from the heat.
- Let the chicken rest before serving: This will help the juices to redistribute throughout the meat, resulting in a more tender and flavorful dish.
Conclusion:
This orange thyme chicken is a delicious and easy-to-make dish that is perfect for a weeknight meal. The chicken is juicy and flavorful, and the orange thyme sauce is the perfect complement. This dish is sure to please everyone at the table.
