2 oranges, peeled and sliced
2 cups strawberries, sliced

1/4 cup olive oil
2 tablespoons plus 2 teaspoons sugar
2 tablespoons white vinegar
1 tablespoon minced fresh parsley
1/4 teaspoon salt
Dash hot pepper sauce
SALAD:
1/3 cup sugar
1 cup pecan halves
2 tablespoons butter
4 cups torn fresh spinach
4 cups torn romaine
1 can (15 ounces) mandarin oranges, drained
2 celery ribs, chopped
1 cup sliced fresh strawberries
4 green onions, chopped

Steps:

  • For dressing, in a small bowl, whisk the oil, sugar, vinegar, parsley, salt and pepper sauce until blended. Cover and refrigerate., In a large heavy skillet, melt sugar over medium-low heat without stirring until golden brown, about 30 minutes. Add pecans and butter; stir constantly until butter is melted and pecans are coated. Remove from the heat. Pour onto a foil-lined baking sheet; cool completely. l/3 cup fresh lemon juice
l/4 cup sugar
2 tsps. arrowroot
2 tbls. orange liqueur
4 navel oranges
4 kiwis, peeled and cut lengthwise into eighths
5 pints of ripe strawberries, halved if large
fresh mint sprigs for garnish

Steps:

  • In a small nonreactive saucepan, combine the orange juice, lemon juice and sugar and bring to boil. Reduce the heat to low and simmer until reduced to l l/3 cups, about 10 min. Dilute the arrowroot in l tbls. cold water. Stir into the syrup and return to a boil, stirring. Remove from heat and let cool. Stir in the orange liqueur. Cover and refrigerate for 2 hrs. Using a sharp knife, peel the oranges, removing all the white pith. Cut in sections. Toss the fruit with dressing up to 2 hours before serving. Garnish with mint.
