SWEET POTATO CASSEROLE

Sweet Potato Casserole image

This version of the classic Thanksgiving side dish forgoes the traditional marshmallow topping for a generous sprinkle of brown sugar, butter and pecans. You get crunchy, soft and sweet all in one glorious bite.

Provided by Marian Burros

Categories     casseroles, side dish

Time 2h

Yield 8 servings

Number Of Ingredients 10

4 medium-large sweet potatoes (about 3 pounds)
6 tablespoons brown sugar
1/4 cup orange juice
1/4 cup heavy cream or whole milk
3 1/2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1/2 teaspoon salt
3 tablespoons unsalted butter, softened slightly
1/2 cup dark brown sugar
3/4 cup chopped pecans

Steps:

  • To make the casserole, heat oven to 375 degrees. Bake sweet potatoes until very tender, about 1 hour 20 minutes. Remove and let cool. Reduce heat to 350 degrees.
  • When potatoes are cool enough to handle, cut them in half, scoop out flesh and mash until smooth. You should have about 4 cups. Using a hand mixer, mix in brown sugar, orange juice, heavy cream, butter, vanilla and salt. Place in a casserole dish.
  • To make the topping, combine the butter, brown sugar and pecans. Sprinkle over sweet potato mixture. Bake for 30 minutes. Serve hot.

Tips:

  • To ensure a smooth and lump-free casserole, whisk the eggs, milk, spices, and vanilla extract in a separate bowl before adding them to the mashed sweet potatoes.
  • Don't overmix the casserole batter. Overmixing can result in a dense and rubbery texture.
  • For a crispy and golden-brown topping, use a combination of melted butter and brown sugar. If you prefer a pecan crumble topping, combine chopped pecans, melted butter, flour, and brown sugar.
  • Bake the casserole until the center is set and a toothpick inserted into the center comes out clean. Overbaking can dry out the casserole.
  • Let the casserole cool slightly before serving to allow the flavors to meld and firm up.

Conclusion:

This orange-spiced sweet potato casserole is a delicious and comforting dish perfect for any occasion. It is easy to make and can be customized to your liking. Whether you prefer a crispy or pecan crumble topping, this casserole is sure to be a hit. So next time you're looking for a sweet and savory side dish, give this recipe a try!
