Time 1h15m

Yield 4 servings

Number Of Ingredients 11

2 teaspoons kosher salt
1 1/2 tablespoons five-spice powder
1 1/2 teaspoons ground coriander
Freshly ground black pepper
4 3/4-inch center-cut pork chops, bone in
2 tablespoons peanut or olive oil
1/4 cup white wine or sherry
1/2 to 3/4 cup chicken broth
Strips of zest from 1/2 orange
1 tablespoon grated ginger
2 cloves garlic, peeled, crushed and chopped

Steps:

  • Heat oven to 325 degrees. In a small bowl, combine salt, five-spice powder, coriander and black pepper. Put the pork chops in a large bowl, and sprinkle with the spice mixture, lightly coating the chops by patting and shaking them.
  • Place a large sauté pan over medium-high heat for 2 minutes. Add 1 tablespoon oil. Place pork chops in pan, and brown well on both sides. Pour off fat, then return pan to heat. Add wine, broth, orange zest, ginger and garlic. Bring to a boil, then cover pan and place in oven. Braise until tender, about 1 hour. Allow the chops to cool in the cooking liquid.
  • To serve, heat remaining 1 tablespoon oil in a large sauté pan. Add chops, and cook until reheated and browned, about 2 minutes a side. If desired, serve with polenta or risotto.

Tips:

  • To achieve maximum flavor, select thick-cut pork chops (at least 1 inch thick) as they can withstand the cooking time without drying out.
  • Enhance the taste of the pork chops by pounding them gently with a meat mallet or rolling pin before cooking. This tenderizes the meat and allows the marinade to penetrate deeper.
  • For optimal results, marinate the pork chops for at least 30 minutes, but ideally overnight. This allows the flavors to fully infuse into the meat.
  • Sear the pork chops over high heat to create a beautiful crust and lock in the juices. Then, reduce the heat and continue cooking until the chops reach an internal temperature of 145°F for medium-rare or 160°F for medium.
  • To ensure even cooking, use a meat thermometer to accurately gauge the internal temperature of the pork chops.
  • Complement the pork chops with a flavorful sauce or glaze. The orange-spice glaze used in this recipe adds a delightful citrusy and spicy touch.
  • Accompany the pork chops with a variety of side dishes such as roasted vegetables, mashed potatoes, or a crisp salad to create a complete and satisfying meal.

Conclusion:

With its tantalizing blend of spices, zesty orange notes, and tender, juicy pork, this orange-spice pork chop recipe is sure to delight your taste buds. The marinade infuses the pork chops with incredible flavor, while the quick pan-searing and oven-baking methods ensure a perfectly cooked chop. Whether you're hosting a special occasion dinner or simply seeking a delectable weeknight meal, these orange-spice pork chops are guaranteed to impress.
