Number Of Ingredients 8

2 cups all-purpose flour
½ cup white sugar
3 teaspoons baking powder
½ teaspoon salt
¾ cup orange juice
⅓ cup vegetable oil
1 egg
1 tablespoon orange zest

Steps:

  • Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.
  • In a medium bowl, combine flour, sugar, baking powder, orange peel and salt; mix well. In a small bowl, combine orange juice, oil and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.)
  • Fill cups 2/3 full. Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.

1 ¾ cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon salt
½ teaspoon ground nutmeg
⅓ cup vegetable oil
¾ cup white sugar
1 egg
¾ cup milk
¾ cup white sugar
1 teaspoon ground cinnamon
½ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 12 muffin cups.
  • In a large bowl, combine flour, baking powder, salt and nutmeg. In a separate bowl, beat together oil, 3/4 cup sugar, egg and milk. Stir egg mixture into flour mixture, just until moistened. Spoon batter into prepared muffin cups.
  • Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into a muffin comes out clean.
  • While muffins are baking, mix together 3/4 cup white sugar and 1 teaspoon cinnamon. While muffins are still hot, dip tops in melted butter and then in cinnamon sugar mixture.

1/3 c packed brown sugar
1/4 c butter, softened
1 egg, beaten
3/4 c milk
1/2 c orange juice
1 Tbsp grated orange peel
3 c biscuit baking mix
1 pkg 9 oz. condensed mincemeat, crumbled
cinnamon and sugar topping

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. In a large bowl, beat sugar and butter until fluffy.
  • 3. Add egg, milk, orange juice and peel, mix well.
  • 4. Stir in biscuit mix and mincemeat only until moistened, do not over mix.
  • 5. Fill lined muffin tin to 3/4 full. Sprinkle Cinnamon and Sugar Topping evenly over the muffins.
  • 6. Bake 18 to 20 minutes or until golden brown. Remove from oven onto a wire rack.
  • 7. Remove from the muffin tin. Serve warm with a pat of butter.
  • 8. Cinnamon and Sugar Topping: Combine 2 Tbsp. of sugar and 2 tsp. of ground cinnamon.
