Time 14h50m

Yield 16

Number Of Ingredients 12

1 cup butter (room temperature)
2 cups sugar
4 large eggs
1 teaspoon baking soda
1/2 cup buttermilk (well-shaken)
3 1/2 cups all-purpose flour
1 pound dates, chopped
1 pound orange slice candies, chopped
2 cups pecans, chopped
1 1/4 cups flaked coconut
1 cup fresh orange juice
2 cups confectioners' sugar

Steps:

  • Gather the ingredients.
  • Preheat oven to 250 F. Grease and flour a 10-inch tube cake pan .
  • Cream butter and sugar together in a mixing bowl with an electric mixer, until light and fluffy.
  • Add eggs, one at a time; beat well after each addition.
  • Dissolve baking soda in buttermilk and add to batter.
  • Place flour in large bowl and add dates, orange slice candy, and nuts. Stir to coat all pieces thoroughly.
  • Add flour mixture and coconut to creamed mixture. At this point, batter will be stiff. It might be easier to mix with hands or a sturdy spoon.
  • Spoon batter into prepared cake pan and spread evenly.
  • Bake in preheated oven for 2 1/2 hours.
  • Just before cake comes out of the oven, make topping. In a medium bowl, combine orange juice and confectioners' sugar. Stir until smooth and well blended. Gradually pour juice mixture over hot cake as soon as it comes out of the oven. Use a toothpick to prick cake in several places, if desired. Let orange slice cake stand in pan overnight.
  • Carefully invert cake onto a cake plate; slice and serve.

GUMDROP CAKE

Gumdrop Cake image

I don't use baking gums for this. Those things are horrid. If you wouldn't eat them right out of the bag, don't bake with them. Don't use any black ones. Ganong are the best-they don't make black ones. The easiest way to cut them is with scissors dipped in flour.

Tips:

  • Use fresh oranges. Fresh oranges will give your cake a brighter flavor and a more vibrant color. If you don't have fresh oranges, you can use frozen or canned orange juice concentrate, but the flavor will not be as good.
  • Grate the orange zest. The orange zest is the outer layer of the orange peel. It contains a lot of flavor, so it's important to grate it finely and add it to your cake batter.
  • Use a bundt pan. A bundt pan is a type of cake pan with a hole in the center. This allows the cake to cook evenly and it also creates a beautiful presentation.
  • Don't overmix the batter. Overmixing the batter can make your cake tough. Mix the batter just until the ingredients are combined.
  • Bake the cake at the right temperature. The cake should be baked at 350 degrees Fahrenheit for about 55 minutes. If you bake the cake at a higher temperature, it will brown too quickly and the inside will be undercooked.
  • Let the cake cool before glazing it. The cake needs to cool completely before you glaze it. This will help the glaze to set properly.

Conclusion:

Orange slice gumdrop cake is a delicious and festive cake that is perfect for any occasion. It's easy to make and it's always a hit with guests. So next time you're looking for a special cake to make, give this one a try. You won't be disappointed!
