1 lb sweet potato, peeled and sliced 1/4 inch thick
2 tablespoons butter
1 lb onion, thinly sliced
3/4 lb granny smith apple, peeled,cored & thinly sliced
3 tablespoons flour
1/2 cup chicken stock
3/4 cup fresh breadcrumb
3/4 cup sharp cheddar cheese, coarsely grated
6 slices bacon, cooked and crumbled

Steps:

  • Preheat oven to 350 degrees.
  • Butter 13X6 inch oval baking dish.
  • Melt butter in heavy large skillet over medium heat.
  • Add onions and saute until tender, about 10 minutes.
  • Toss apples with flour in medium bowl.
  • Arrange half of sweet potatoes in bottom of prepared dish.
  • Top with half of apple slices.
  • Arrange remaining potatoes and then remaining apples.
  • Cover with sauteed onions.
  • Pour stock over all.
  • Bake until sweet potatoes are tender, about 45 minutes.
  • Mix breadcrumbs, cheese and bacon in small bowl, then sprinkle mixture over potatoes.
  • Bake an additional 20 minutes.
  • Broil until topping browns, if needed.
  • Let cool 5 minutes before serving.

1 cup cream
2 tablespoons grated ginger
Zest from one orange
2 pounds sweet potatoes, peeled and grated, about 4 cups
1/2 cup chopped hazelnuts or walnuts (optional)
Salt and black pepper

Steps:

  • Preheat oven to 400 degrees. Grease a 6- to 8-cup gratin dish with butter. In a small pan, gently heat remaining butter with cream, ginger and orange zest, stirring once or twice, until butter has melted and mixture is just steaming. Remove from heat.
  • Spread potatoes and nuts evenly into baking dish and sprinkle with plenty of salt and pepper. 3 Idaho potatoes, sliced
3 Granny Smith apples, sliced
1/2 cup grated cheddar or Monterey Jack cheese

Steps:

  • Preheat oven to 400 degrees and lightly oil a 9 by 9-inch glass or ceramic casserole dish. Shingle one layer of potatoes to cover the bottom of the casserole dish. Sprinkle over with some of the sliced onions, then layer with some of the sliced apples. Season with salt and pepper. Repeat the layering process until the entire product is used, making sure you finish with a layer of potatoes. 2 eggs, lightly beaten

½ teaspoon all-purpose flour
1 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

1 teaspoon lemon juice
3 pounds sweet potatoes (about 5 medium), peeled and thinly sliced
1/4 cup maple syrup
1 tablespoon butter, melted
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup soft bread crumbs
2 teaspoons olive oil
1/4 teaspoon ground cinnamon

1/4 teaspoon cider vinegar

Steps:

2 tart apples, such as Pink Lady, peeled, cored, and sliced
1 large ripe but firm pear, peeled, cored and sliced
Salt to taste
2 tablespoons mild honey, such as clover (substitute agave nectar for vegans)
2 tablespoons walnut oil, plus more for greasing the pan
2 teaspoons finely chopped or grated orange zest
2 1/2 cups freshly squeezed orange juice

Steps:

  • 1. Heat the oven to 400 degrees. Oil a 3-quart gratin or baking dish with walnut oil. Toss together the sweet potatoes, apples and pear in a large bowl. Season with salt to taste. 2. In a small saucepan or in a microwave at 50 percent power, heat the honey (or agave nectar) and the walnut oil together just until warm. Add to the sweet potato mixture, add the orange zest and toss together well until the fruit and vegetables are well coated.
