TOMATO SAUCE WITH CAPERS AND VINEGAR

Tomato Sauce With Capers and Vinegar image

There are so many ways to enjoy this sauce. You can serve it with pasta or grains, over vegetables (try it with cauliflower) or on a bruschetta. I recently tried it with Israeli couscous, sautéed in olive oil then simmered in stock and topped with this sauce.

Tips:

  • Choose the right fish. Orange roughy is a mild-flavored, delicate fish that works well with this recipe. However, you can substitute any other firm-fleshed white fish, such as cod, halibut, or tilapia.
  • Don't overcook the fish. Orange roughy is a quick-cooking fish, so it's important to cook it just until it is opaque in the center. Overcooked fish will be dry and tough.
  • Use fresh ingredients. The fresher the ingredients, the better your dish will taste. If you can, use fresh olives, capers, and tomatoes.
  • Don't be afraid to experiment. This recipe is just a starting point. Feel free to add or remove ingredients to suit your own taste.

Conclusion:

This orange roughy with sautéed olives, capers, and tomatoes is a delicious and easy-to-make dish that is perfect for a weeknight meal. The fish is cooked to perfection and the sautéed olives, capers, and tomatoes add a burst of flavor. Serve this dish with your favorite sides, such as rice, potatoes, or vegetables.
