Tips:

  • Ensure Fish Freshness: Opt for fresh orange roughy fillets with vibrant color and firm texture. Avoid fillets with signs of discoloration or sliminess.
  • Pat Fish Dry: Before cooking, pat the fish fillets dry using a paper towel. This helps remove excess moisture, ensuring a crispy outer layer and preventing sogginess.
  • Seasoning Perfection: Use a combination of salt, pepper, and paprika to season the fish fillets. You can also add a squeeze of lemon juice for extra brightness.
  • Almond Coating Adhesion: To ensure the almond crust adheres well to the fish, lightly coat the fillets in flour before dipping them into the egg wash and almond mixture.
  • Golden Brown Almond Crust: Pan-fry the fish fillets in a combination of butter and olive oil over medium heat. Cook until the almond crust turns golden brown and crispy, about 3-4 minutes per side.
  • Perfect Internal Temperature: Use a meat thermometer to ensure the internal temperature of the fish reaches 145°F (63°C). This ensures the fish is cooked thoroughly while retaining its moist and flaky texture.
  • Garnish for Vibrancy: Before serving, garnish the cooked fish fillets with fresh parsley or chopped almonds for an extra touch of color and flavor.
