ORANGE RAISIN MUFFINS

Orange Raisin Muffins image

This is a new recipe for me, found when I was looking for my orange muffin recipe for Bea Liles. They are a Taste of Home recipe by Robert Taylor of Mesa, Arizona. These sounded and looked so good that I had to copy them off to try. I just happen to have several bags of fresh picked oranges from Southern Texas just ready for...

Categories     Other Breakfast

Time 15m

Number Of Ingredients 10

1 medium navel orange
1/2 c orange juice, fresh
1/2 c butter, melted
1 egg
1 1/2 c all purpose flour
3/4 c sugar
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1/2 c raisins

Steps:

  • 1. SEE NEW NOTE ABOVE ABOUT THE PEEL....peel orange and place peel in a blender or food processor. Separate orange into segments; place in blender. Add orange juice; cover and process until well blended.
  • 2. Add butter and egg.
  • 3. In a large bowl, combine the flour, sugar, baking powder, baking soda and salt.
  • 4. Stir the orange mixture into dry mixture just until moistened. Fold in raisins.
  • 5. Fill greased or paper lined muffin cups two-thirds full.
  • 6. Bake at 400* for 15-20 min or until a toothpick comes out clean.
  • 7. Cool for 5 minutes before removing from pan to wire rack.

Tips:

  • Use fresh oranges for the best flavor. If you don't have fresh oranges, you can use 1/2 cup of orange juice concentrate and 1/4 cup of water.
  • Grate the orange zest before juicing the oranges. This will help release the orange's natural oils and give the muffins a more intense orange flavor.
  • Soak the raisins in hot water for 10 minutes before adding them to the batter. This will help plump them up and make them more flavorful.
  • Use a muffin pan that has been greased or lined with paper liners. This will prevent the muffins from sticking to the pan.
  • Fill the muffin cups about 2/3 full. If you fill them too full, the muffins will overflow while baking.
  • Bake the muffins at 375 degrees Fahrenheit for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Conclusion:

These orange raisin muffins are a delicious and easy-to-make breakfast treat. They are perfect for a quick grab-and-go breakfast or a snack. The muffins are also a great way to use up leftover oranges and raisins. Whether you are a seasoned baker or a beginner, you will love this recipe!
