Steps:
- 1. Boil sweet potatoes till tender. When cooled enough to handle peel if not already. Then add to a large bowl.
- 2. Add melted butter, & blend into potatoes. Or cut butter into pieces and add while potatoes are still hot.
- 3. Mash potatoes to combine with butter.
- 4. Add eggs and beat or mix till blended.
- 5. Add milk, cinnamon, nutmeg & orange juice, & blend together.
- 6. Combine vanilla bean paste, orange extract together in small cup along with orange zest, then stir to mix, and pour into sweet potato mixture & blend together.
- 7. Beat potatoes with mixer, and remove any strings that wrap around the beaters from the potatoes. See picture. Repeat if needed.
- 8. Add the flour, and beat to blend.
- 9. Spray a 9X13X2 inch casserole dish with non stick cooking spray, and pour in potato mixture, Smooth out top.
- 10. Prepare the topping by combining all of the topping ingredients in a medium size bowl. Then blend together till mixture is combined & crumbly.
- 11. Sprinkle topping over top of potatoes, & bake in a preheated 350 degrees F. oven for about 45 minutes or until potatoes are hot & bubbly. Allow to cool at least about 15 minutes to come together before serving or a bit longer if needed.

- 1. Preheat oven to 350 degrees F. Spray a 1 1/2 qt. casserole dish with cooking spray.
- 2. In a large microwave-safe bowl, melt the butter. Next, add & lightly mash the sweet potatoes with the mixer beaters. Then add the sugar, beaten eggs, salt, milk, and vanilla extract and beat with the mixer until well-blended. Spoon into the prepared casserole dish. TOP SECRET: If you're rushed for time, buy a 32 oz. microwavable container of sweet potatoes and spoon into the casserole dish, then add the topping. We won't tell! =^..^=
- 3. For the topping, in a medium microwave-safe bowl, melt the butter. Then add the brown sugar, flour, & chopped pecans and mix together with a fork.
- 4. Pour or spoon the topping over the sweet potato mixture...

- 1. Preheat oven to 400 degrees and butter a large casserole dish, set aside.
- 2. Using a fork punch a few holes in each sweet potato.
- 3. Bake in preheated oven 45 minutes or until fork tender.
- 4. When cool enough to handle peel and slice into 1/2 inch rounds.
- 5. Place one layer of sweet potato slices on bottom of buttered casserole dish. Sprinkle some toasted pecan pieces on top, repeat layers until you finish with pecans.

- 7. Warm the Bourbon in a medium saucepan over medium heat. When warm ignite to burn off most of the alcohol. Do keep your face and hands back from the pan.

- 10. Turn the heat to medium low and add butter. Whisk until the butter is melted and well incorporated.
- 11. Pour bourbon sauce over the sweet potatoes.
- 12. Bake in the 400 degree oven for 30 minutes or until bubbly. Serve hot.
