ORANGE DELIGHT CAKE

Orange Delight Cake image

Years ago, a co-worker of mine made this cake for one of our potlucks and it was pretty tasty. The recipe is simple and quick.

Categories     Cakes

Number Of Ingredients 8

1 box orange cake mix
1 can(s) (21 oz) peach pie filling*
2 large eggs
1/2 c sour cream
1 pkg (8 oz) cream cheese, softened
1 box (small) instant vanilla pudding mix
1 can(s) (20 oz) crushed pineapple, undrained
1 (8 oz) container cool whip whipped topping**

Steps:

  • 1. Preheat the oven to 350°F. Ignore the directions on the cake mix box and mix as follows: With a fork or large spoon, beat the cake mix, pie filling*, eggs and sour cream together for about 1 minute (Make sure it is well blended). Pour the mixture into an ungreased, parchment paper lined 10x16 inch jelly roll pan. Bake for 25 to 35 minutes. Let cool, in the pan, on a wire rack.
  • 2. In a large bowl, whip together the cream cheese, pudding mix and pineapple. Fold in the whipped topping, blend well. Spread the cream cheese mixture on the cooled cake and refrigerate until ready to serve. Store any leftovers in the refrigerator.
  • 3. * I like to chop up the peaches that are in the pie filling so there are more pieces throughout the cake instead of just large chunks here and there. ** I also like to use REAL whipped cream, as I'm not a huge fan of frozen whipped toppings, but the original recipe used Cool Whip (and mixed with the other ingredients, it tastes just fine).

Tips:

  • Mise en Place: Before starting, ensure all ingredients and equipment are ready and measured. This will help ensure a smooth and organized baking process.
  • Fresh Ingredients: Using fresh oranges and pineapples will provide the best flavor for the cake. If using canned fruits, drain them well and pat them dry before using.
  • Creaming Butter and Sugar: Creaming the butter and sugar together until light and fluffy is essential for incorporating air into the cake batter, resulting in a tender and moist crumb.
  • Gradually Add Eggs: Add the eggs one at a time, beating well after each addition. This helps prevent the batter from curdling and ensures a smooth and even mixture.
  • Grated Orange Zest: Adding grated orange zest to the batter enhances the citrus flavor of the cake. Make sure to use unwaxed oranges for the best flavor and avoid the bitter white pith.
  • Baking Temperature: Preheat the oven to the correct temperature before baking the cake. This will help ensure even baking and prevent the cake from overcooking or undercooking.
  • Checking for Doneness: Insert a toothpick or skewer into the center of the cake. If it comes out clean, the cake is done. If it comes out with batter or crumbs attached, the cake needs to bake for a few more minutes.
  • Cooling the Cake: Allow the cake to cool completely before frosting it. This will help prevent the frosting from melting and ensure it sets properly.
  • Using a Bundt Pan: A Bundt pan is a great choice for baking this cake as it allows for even heat distribution and creates a beautiful fluted design.

Conclusion:

The Orange Pineapple Delight Cake is a delectable treat that combines the vibrant flavors of oranges and pineapples with a moist and tender crumb. With its delightful citrus aroma and refreshing taste, this cake is perfect for any occasion. Whether you're hosting a party, celebrating a special event, or simply craving a sweet treat, this cake is sure to impress. Remember to follow the tips and instructions carefully to ensure a successful baking experience and a truly delightful cake. Enjoy!
