TOASTED-PECAN GREEN BEANS

Toasted-Pecan Green Beans image

The aroma of the basil when combined with the green beans is vibrant and intoxicating. This dish is almost like a deconstructed pesto without the cheese, or a Southern version of green beans amandine, a once-elegant side dish, that in the 1970s became a sad image of itself, banished to cafeterias and dining halls.

Yield serves 4 to 6

Number Of Ingredients 6

1 1/2 pounds haricots verts or other thin green beans, trimmed
1/4 cup olive oil
1/2 cup chopped pecans
1 clove garlic, very finely chopped
1 tablespoon chopped fresh basil
Coarse salt and freshly ground black pepper

Steps:

  • Prepare an ice-water bath by filling a large bowl with ice and water.
  • Bring a large pot of salted water to a rolling boil over high heat. Add the beans and cook until crisp-tender, about 3 minutes. Drain well in a colander, then set the colander with beans in the ice-water bath (to set the color and stop the cooking), making sure the beans are submerged.
  • In the same pot, heat the olive oil over medium-low heat. Add the pecans and cook until toasted, about 5 minutes. Add the garlic and basil; cook until fragrant, 45 to 60 seconds.
  • Drain the beans, shaking off the excess water, and return them to the pot. Toss to combine with the pecan mixture. Taste and adjust for seasoning with salt and pepper. Serve immediately.

Tips:

  • Use fresh green beans: Fresh green beans are more flavorful and have a better texture than frozen or canned beans.
  • Trim the green beans: Trim the ends of the green beans before cooking. This will remove any tough or woody parts.
  • Blanch the green beans: Blanching the green beans in boiling water for a few minutes will help to preserve their color and crispness.
  • Use a variety of nuts: You can use any type of nuts in this recipe, but pecans, walnuts, and almonds are all good choices.
  • Toast the nuts: Toasting the nuts will bring out their flavor and make them more fragrant.
  • Use fresh orange juice: Fresh orange juice is the best choice for this recipe. Bottled or canned orange juice can be used, but it will not have the same flavor.
  • Garnish with fresh herbs: Garnish the green beans with fresh herbs, such as parsley, cilantro, or chives, before serving.

Conclusion:

Orange pecan green beans are a delicious and easy side dish that can be enjoyed by people of all ages. They are perfect for potlucks, picnics, and holiday gatherings. The combination of sweet oranges, crunchy pecans, and savory green beans is sure to please everyone.
