ORANGE PASTA SALAD
This is one of our all time favorite summer meals and a full recipe will usually last us two meals. It keeps very well in the refrigerator and DH says sometimes that it tastes better the next day. I have never served this to anyone who didn't love it. Taken from Woman's Day Low-Fat Meals June 1995

Steps:
- 1. In large bowl, combine pasta, chicken, grapes, cucumber, green onions and half the orange sections.
- 2. In small bowl, whisk together orange juice concentrate, oil, vinegar, salt and pepper. Pour over pasta mixture and toss gently to combine.
- 3. Arrange lettuce on large platter. Mound pasta salad on top and garnish with remaining orange sections.
- Note: I omit step 3 and prefer this salad quite cold so it goes into my fridge for at least an hour before serving. Served simply with fresh crusty rolls and butter.

Steps:
- Combine ingredients. Best with lots of black pepper, in my opinion.
- Orange flavor will get stronger as it sits in the fridge. Zesting all the peel from the 1/2 orange will make the orange flavor rather strong, especially if you plan to refrigerate before serving.
- If you don't have a zester, crosshatch an area of orange peel with light cuts from a sharp knife, then "shave" the pieces off. It's very easy and with heavy crosshatching yields results comparable to using a good zester.

Tips:
- For the best flavor, use fresh oranges and herbs.
- If you don't have an orange zester, you can use a microplane or the fine side of a box grater to zest the oranges.
- To make the dressing ahead of time, whisk together the olive oil, orange juice, vinegar, honey, salt, and pepper in a jar or container. Store in the refrigerator for up to 2 weeks.
- To cook the pasta, bring a large pot of salted water to a boil and cook the pasta according to the package directions. Drain the pasta and rinse it with cold water.
- To assemble the salad, combine the cooked pasta, oranges, red onion, cucumbers, tomatoes, feta cheese, parsley, and basil in a large bowl. Drizzle with the dressing and toss to coat.
- Serve the salad immediately or chill it for later.
Conclusion:
Orange pasta salad is a refreshing and flavorful salad that is perfect for a summer meal. It is easy to make and can be tailored to your own taste preferences. With its bright citrus flavor and colorful ingredients, this salad is sure to be a hit at your next gathering. So next time you're looking for a light and refreshing meal, give orange pasta salad a try.
