GRILLED SALMON WITH MUSTARD ORANGE MARINADE
Dijon, orange juice and scallions, most of which are in your fridge. Easy, low in carbs and so delish. I found this on the eating well website. Hope you enjoy. Original recipe called for 2 T. dijon, we have chosen to cut back to 1 tablespoon and love it that way. Sometimes we broil in the oven and to keep the steaks moist, I add some of the leftover marinade about half way through broiling.

ORANGE-THYME SAUCE AND MARINADE FOR GRILLING
This is a great sauce over all types of meat, beef, pork and chicken. Remember to always pull some of the sauce to the side for basting or for serving with the meat and do not reuse any sauce used for marinading the meat as then it is contaminated.

SALMON IN ORANGE-LIME MARINADE
Found in The Wichita Eagle (of all places!). Adapted from "The Vineyard Cookbook" by Barbara Scott-Goodman. Am stashin' this as I suspect it will do well with summer bounty down here - mackerel, tuna, bluefish & maybe even flounder on the grill. Could easily go under the broiler as well for the grilles (get a hibachi!). Plan to serve with char grilled garden tomatoes, zucchini & peppers and either fresh roasted corn in the husks or a spicy potato salad.

GRILLED TUNA WITH ORANGE MARINADE RECIPE
Provided by á-174942
Number Of Ingredients 9
Steps:
- Place tuna steaks in a shallow baking dish. Mix orange juice, soy sauce, olive oil, parsley, lemon juice, garlic, oregano and pepper to make a marinade. Pour marinade over tuna steaks and refrigerate for 30 minutes. Turn steaks after 15 minutes. Remove steaks from marinade shaking off excess oil and place on a clean hot grill. Cook for 5 to 6 minutes. Baste with excess marinade and turn and cook for an additional 4 to 5 minutes. Do not overcook. This recipe yields 6 servings.
Tips:
- To make the most of your orange marinade, use fresh oranges whenever possible.
- Be sure to zest the oranges before juicing them, as the zest contains a lot of flavor.
- If you don't have any fresh oranges on hand, you can use bottled orange juice, but be sure to use 100% orange juice and not a juice blend.
- To prevent the marinade from becoming too acidic, add a little bit of honey or sugar.
- You can also add other spices and herbs to the marinade to taste, such as garlic, ginger, thyme, or rosemary.
- Be sure to marinate the meat for at least 30 minutes, but no longer than 24 hours.
- When cooking the meat, be sure to baste it with the marinade so that it stays moist and flavorful.
Conclusion:
Orange marinade is a versatile and flavorful marinade that can be used on a variety of meats, including chicken, pork, and fish. It is easy to make and can be used to create a variety of delicious dishes. Whether you are grilling, roasting, or baking, orange marinade is a great way to add flavor and moisture to your meat.
