ORANGE CHOCOLATE LOAF CAKE FROM FLORIDA

Orange Chocolate Loaf Cake From Florida image

This cake, made with whipped cream instead of butter, is a deliciously plain, moist, coal-black chocolate loaf flavored with orange zest and steeped in orange juice after it is baked.

Provided by Maida Heatter

Categories     Cake     Bake     Chocolate     Orange

Yield 12 servings

Number Of Ingredients 12

1 1/4 cups sifted all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup unsweetened cocoa powder (preferably Dutch-process)
1 cup sugar
1 cup heavy cream
1 teaspoon vanilla extract
2 large eggs
Finely grated zest of 1 large, deep-colored orange
For the glaze:
1/3 cup orange juice
3 tablespoons sugar

Steps:

  • Adjust rack one-third up from the bottom of the oven and preheat oven to 350 degrees. You will need a loaf pan measuring about 8½ x 4½ x 2¾ inches, or one with about a 6‑cup capacity. Butter the pan and dust it all over lightly with fine, dry bread crumbs, shake out excess crumbs, and set the pan aside.
  • Sift together the flour, baking powder, salt, cocoa, and sugar and set aside.
  • Beat the cream and vanilla in the small bowl of an electric mixer until the cream holds a definite shape. On low speed, add the eggs, one at a time, scraping the bowl with a rubber spatula and beating only until the egg is incorporated after each addition. (The eggs will thin the cream slightly.)
  • Transfer to the large bowl of the mixer and gradually, on low speed, add the sifted dry ingredients, scraping the bowl and beating only until smooth. Remove from the mixer and stir in the grated zest. That's all there is to it.
  • Turn the batter into the prepared pan and smooth the top. Bake for about 1 hour and 5 minutes, until the top springs back when lightly pressed with a fingertip.
  • For the glaze:
  • As soon as the cake goes into the oven, mix the orange juice with the sugar and let it stand while the cake is baking.
  • After you remove the cake from the oven, let it cool for 5 minutes. Then, a little at a time, brush the orange juice/sugar mixture all over the cake; encourage most of it to run down the sides between the cake and the pan, but thoroughly wet the top also. The cake will absorb it all.
  • Let the cake stand in the pan until it is completely cool. Then cover the pan loosely with a piece of wax paper. Invert the cake into the palm of your hand-easy does it-remove the pan, cover the cake with a rack, and invert again, leaving the cake right side up.

ORANGE STREUSEL LOAF CAKE

Orange Streusel Loaf Cake image

This yummy cake is my potluck specialty and everyone absolutely loves it. It comes from a recipe on the side of the Duncan Hines Orange Supreme cake mix. It is one of the most moist and tastiest cakes I've ever eaten. The orange cake mixes can sometimes be hard to find so another suggestion would be to use the Tropical cake mix. Either way, mmm-mmm good!!!

CORNMEAL-OATMEAL CRANBERRY-ORANGE LOAF

Cornmeal-Oatmeal Cranberry-Orange Loaf image

My husband, being a true Texan, loves cornbread almost as much as he loves me. I was not a great cornbread baker, so I bought The Cornbread Gospels by Crescent Dragonwagon to learn how to make his tummy happy, and what a great book that turned out to be. Every form and fashion of cornbread you can imagine, and (almost) all good. This recipe is from that book, and has earned rave reviews everywhere I have taken it. It's beautiful, and the essences of orange and cranberry combined with the crunchiness of stone ground cornmeal sets it apart from other quick breads, and it will leaving you wanting more. I hope you like it as well as we do.

Provided by Feisty

Categories     Quick Breads

Time 1h15m

Yield 1 large loaf, 8-10 serving(s)

Number Of Ingredients 12

1 1/2 cups unbleached all-purpose flour
1/3 cup stone-ground yellow cornmeal
1 teaspoon baking powder
1/4 teaspoon baking soda
3/4 cup plus 2 tablespoons sugar
2 eggs
3 tablespoons canola oil
1/2 cup plus 2 tablespoons buttermilk
2 finely grated oranges, zest of
1 cup fresh cranberries, coarsely chopped
4 tablespoons walnuts, toasted and chopped
1/4 cup rolled oats

Steps:

  • Preheat the oven to 350. Coat 1 large, 2 medium, or 3 small loaf pans with oil.
  • Soft the flour, cornmeal, baking powder, baking soda, sugar, and salt into a large bowl.
  • Whisk together the eggs, oil, buttermilk, and orange zest in a second, smaller bowl.
  • In a food processor, pulse the cranberries a few times until they are roughly chopped. Combine the mix-ins--the cranberries, walnuts, and oatmeal--in a third bowl. Sprinkle 1 tablespoon of the flour mixture over them, and toss well.
  • Quickly combine the flour mixture and the egg mixture, using as few strokes as possible. Gently stir in the mix-ins. The batter should be stiff. Spoon the batter into the prepared pan(s). Bake for 45 to 55 minutes for the large pan, 35 to 50 minutes for the mediums, and 35 to 40 minutes for the smalls. Check two-thirds of the way through the baking period; if the loaves are browning excessively, tent them loosely with foil.
  • Let the baked breads cool for 10 minutes in the pan(s), run a thin knife around the edge of each pan, and turn the loaves out. Let finish cooling on a rack.
  • NOTE: When using cirtrus zest, try your best to get organic fruit, because it is free of the waxes and fungicides that are routinely sprayed on conventionally grown citrus fruit peels.

DARJEELING CRANBERRY, GINGER AND ORANGE TEA LOAF (FAT-FREE)

Darjeeling Cranberry, Ginger and Orange Tea Loaf (Fat-Free) image

A delectable and easy Tea Loaf with aromatic and fruity flavours! The beauty of these British and Irish style Tea Loaves or Brack, is that they are nearly always fat-free, making them a tasty snack to have with an afternoon cuppa, and without the guilt! I have added ginger for a subtle kick, and I have discovered that if you soak your fruit in Darjeeling tea, it lends a wonderful flavour to the fruit, you can use any tea of your choice however. Remember to start this Tea Loaf off the night before you wish to bake it, as the fruit steeps in the tea overnight, making them plump and moist. This Tea Loaf freezes well (in slices) and it will stay fresh for a week in an airtight tin. NB: A note on ingredient conversions to US cups; The conversion rate to US cups is very dependant on what type of sugar and flour you use - there is a different rate for white flour and wholemeal flour, as there is for caster (superfine) sugar and granulated sugar. We use weights for measurements, and US cups rely on volume!

DAWN'S ORANGE LOAF CAKE

Dawn's Orange Loaf Cake image

This is a definite cross between a light dessert or a breakfast quick bread treat. It has the texture of a cake but in loaf form. From a TOH booklet and submitted by Dawn C. from Florida. This uses cake flour which I find makes a really lighter texture to the loaves than standard flour. You can substitute all purpose flour but reduce the total by 3 1/2 tbls (for every cup of cake flour you need to reduce all purpose by 2 tbls) but remember that all purpose will probably give you a heavier texture of cake loaf.

LEMON LOAF (OR ORANGE LOAF)

Lemon Loaf (Or Orange Loaf) image

This is a recipe I learned to make in High School. It is simple and Oh! so good! You can use Lemon or Orange to make this recipe and if so desired, you can add blueberries to the Lemon loaf or Cranberries to the Orange loaf for an extra little zing to the desert!

From the issue of November 2006, coup de pouce. I guess you can do it as muffins. Maybe 12 large muffins.

Time 1h15m

Yield 1 loaf, 16 serving(s)

Number Of Ingredients 11

2 cups flour
1 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/3 cup butter
1 egg, beaten
1 teaspoon orange zest, finely grated
2/3 cup orange juice
1 1/2 cups fresh cranberries, cut in half
1 cup walnuts, roughly chopped

Steps:

  • In a large bowl, mix flour, sugar, baking powder, salt and bakind soda. Add butter and, with a pastry knife or 2 knifes, work the preparation until it has the texture of rough crumbs. Add egg, zest and orange juice and stir until preparation is homogeneous, without stirring too much. Add cranberries and walnuts by folding delicately.
  • Pour the dough in a loaf pan of 9" x 5", lighly greased. Cook in the preheated oven of 350 F for about 1 hour or until a toothpick inserted in the center of the loaf comes out clean. Let cool on a rack for 10 minutes.
  • Remove from the pan and put on the rack and let cool completely.

Tips:

  • Choose the right oranges. For the best flavor, use fresh, ripe oranges with a deep orange color. Avoid oranges that are green or have blemishes.
  • Zest the oranges before juicing them. This will help to release the essential oils from the oranges, which will give the loaf a more intense orange flavor.
  • Don't overmix the batter. Overmixing can result in a tough, dense loaf. Mix the batter just until the ingredients are combined.
  • Bake the loaf at the right temperature. The ideal baking temperature for orange loaf is 350 degrees Fahrenheit. Baking the loaf at a higher temperature will cause it to brown too quickly and may result in a dry loaf.
  • Let the loaf cool completely before glazing it. This will help the glaze to set properly.

Conclusion:

Orange loaf is a delicious and versatile quick bread that can be enjoyed for breakfast, lunch, or dessert. It's easy to make and can be customized to your liking. Whether you prefer a classic orange loaf or one with a twist, there's a recipe in this article that's sure to please. So next time you're looking for a sweet and citrusy treat, give orange loaf a try!
