2 cups buttermilk baking mix
2 tablespoons white sugar
1 egg
1 teaspoon orange zest
⅔ cup orange juice
2 tablespoons white sugar
1 teaspoon ground cinnamon
½ cup margarine
½ cup honey

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 medium muffin cups.
  • Mix baking mix, 2 tablespoons sugar, the egg, orange peel, and orange juice. Beat vigorously for 30 seconds.
  • Fill muffin cups about 2/3 full. Mix 2 tablespoons sugar and cinnamon and sprinkle each muffin with about 1/2 teaspoon of sugar mixture. Bake 15 minutes. Serve with honey spread.
  • To Make Honey Spread: Beat 1/2 cup margarine and 1/2 cup honey until fluffy.

zest from one orange
1/4 c orange juice
1/4 c milk

Steps:

  • 1. Preheat oven to 350 degrees. Line muffin pan with paper liners.
  • 2. In large bowl, cream butter and sugar.
  • 3. Add eggs, mix well.
  • 4. Add in orange zest.
  • 5. Mix in flour and baking powder, until well combined.
  • 6. Add orange juice and milk, mixing until combined.
  • 7. Fill muffin pan 3/4s full.
  • 8. Bake 20 - 25 minutes.
  • 9. Cool in pan 15 minutes.
