6 oz Orange Jello Mix
3 ounce instant vanilla pudding
11 ounce can Mandarin oranges, drained
1/2 of a 20 ounce can of Pineapple chunks, drained
One 8 ounce container cool whip

Steps:

  • Mix together 4 cups of water, orange jello mix, and vanilla pudding mix in a sauce pan. Bring to a boil, stirring the whole time to keep clumps from forming. Once it starts to boil, remove from heat. Pour into a heat-resistant container (I usually use a glass baking dish), cover with plastic wrap and place in the fridge for about four hours. Remove from fridge and break up the jello into chunks. Place in a large bowl. Add in the pineapple, mandarin oranges, and whipped cream and mix around until everything is combined. Keep refrigerated until you are ready to serve.

Keeps well for days, and is great to bring for potlucks. Can be made in a pretty jello mold or just in a bowl and scooped with a spoon.

10 ounces canned mandarin oranges, drained
8 ounces Cool Whip
1/2 cup pecans, chopped
2 cups buttermilk

  • In a saucepan, mix the jello powder with the pineapple and the pineapple juice from the can the juice, add the drained oranges.Heat over medium high heat. When it just comes to a boil remove from the heat and allow to cool 30 minutes.

1 large orange jello-o (or 2 small boxes)
2 c boiling water
6 oz frozen orange juice concentrate
8 oz crushed pineapple (can be packed in juice or water - do not drain)
2 can(s) mandarin oranges (11 oz ea) - drain
1 small vanilla or french vanilla instant pudding (we have always preferred french vanilla)
8 or 9 oz cool whip
1 c cold milk

Steps:

  • 1. For jello mixture: Bring water to a boil, add Jell-O, stirring until clear. Remove from heat. Add frozen orange juice concentrate and stir until melted. Stir in mandarin oranges and pineapple. Pour into an 11 x 7 dish and refrigerate overnight or until the jello mixture has completely set.
  • 2. For Topping: Mix pudding with milk until it starts to set up. Be sure to use only 1 cup of milk, as listed in the ingredients. You don't want to make actual pudding. Fold in Cool Whip and spread over top of jello mixture.

1 24 oz carton cottage cheese (i use small curd)
2 3 oz boxes orange-flavored gelatin (or one large box)
4 oz whipped topping (half an 8 oz tub)
2 small cans mandarin orange slices in light syrup, drained (or 1 large can, drained)

Steps:

  • 1. In a large bowl, thoroughly combine the cottage cheese with the Jello. Mixture will be a little grainy due to undissolved sugar (you can stir it until it dissolves, but I never do and it comes out fine - sugar will usually dissolve during refrigeration, but if it doesn't, it's no big deal).
  • 2. Fold in the whipped topping until evenly incorporated. Don't get too vigorous with this as it's possible to stir out all the loft in the topping.
  • 3. Make sure the oranges are well drained (if you're frugal you can use the juice to flavor/sweeten something else). OPTIONAL - Reserve several orange sections for decoration - (I usually pull out 16 well-formed slices). Next, gently stir the remaining fruit into the Jello mixture until well distributed. Remember, don't over-do it or you'll lose too much loft from the whipped topping and the dish will be runny.
  • 4. Transfer mixture to serving dish, smooth top and (OPTIONAL) arrange reserved orange sections in attractive design (I put a slice at each of the clock numbers, all facing the same direction, plus a "flower" of 4 in the center, usually facing the opposite direction from the numbered slices). Cover; refrigerate. Serve cold.
  • 5. VARIATIONS This can easily be made lower calorie or diabetic friendly by choosing dietetic options for the ingredients. Be forewarned, however, if you use a dietetic product for every option, you will probably be disappointed in the flavor. If you want more of a Dreamsicle flavor, you can add half a teaspoon of vanilla extract.

1 large package cook and serve vanilla pudding 4.6 oz (not instant pudding)
1 large package orange jello 6 oz.
2 cups water
1 16 ounce container cool whip
1/2 bag mini marshmallows
2 cans pineapple tidbits (15 oz each) drained
2 cans mandarin oranges (11 oz each) drained
2 bananas

  • 1. Mix together pudding, jello and water in pan and cook over medium heat, stirring constantly, until it boils. Remove from heat and pour into large glass bowl. Refrigerate until mixture thickens, about 1 hour. Beat until creamy. Fold in Cool Whip, marshmallows and drained fruit. Chill another hour before serving. Just before serving, slice bananas and stir them in. Top with additional mini marshmallows for decoration. If you like coconut, you could also top with coconut for a more tropical flavor. Note: Some people loved it, some found it too sweet. If you want a less sweet dessert or lower calorie, use sugar free pudding, sugar free jello and light Cool Whip.

1 pkg lemon gelatin
1 pkg orange gelatin
2 c hot water
2 diced bananas
1 can(s) crushed pineapple, drained (reserve juice for topping)
1 c miniature marshmallows
1 or 2 can(s) mandarin oranges, drained
1 egg
1/2 c sugar
2 Tbsp butter
2 Tbsp flour

Steps:

  • 1. Dissolve gelatin in hot water. Add 1 1/2 cups cold water. When gelatin has thickened, but not set, add bananas and crushed pineapple.
  • 2. Fold in marshmallows and oranges. Pour into 9" X 13" pan and return to refrigerator.
  • 3. After gelatin is set: Cook 2 tbsp flour, 1 egg slightly beaten, 1/2 cup sugar, and 1 cup pineapple juice. Cook until thickened. Add 2 tbsp butter.
  • 4. After this mixture is cold, add 1 cup whipping cream (whipped with juice of one lemon).
  • 5. Spread over top of gelatin, and keep chilled.

1 orange, peeled and sectioned
3/4-1 cup orange juice

1/3 c sugar
1 large box orange jello
1 1/2 c finely grated cheddar cheese (sharp or medium is fine)
1 c chopped pecans
1 large container cool whip

  • 1. Bring pineapple (with juice) and sugar to a boil in medium saucepan. Remove from heat. Add jello and mix well. Add 2 cups COLD water. Mix and chill until set. I usually do this step the day before I need this dish.
  • 2. When jello has set completely, stir to break it up and add the cheese, pecans and Cool Whip. You can save some of the Cool Whip to cover top if you like. Mix well and chill in fridge for at least an hour before serving.
  • 3. I made this with lemon the last time I made it and I loved them both. My mother-in-law still loves the orange the best.
