ORANGE GLAZED COUNTRY PORK RIBS

Orange Glazed Country Pork Ribs image

This is a wonderful way to cook country style ribs. The end result is a slightly sticky, somewhat sweet tasty rib dish

Provided by JanetB-KY

Categories     Pork

Time 9h15m

Yield 4 serving(s)

Number Of Ingredients 9

2 lbs country-style boneless pork ribs
2 slices onions, separated into rings
1 garlic clove, minced
1/2 cup chopped green pepper
1/2 cup orange marmalade
2 tablespoons cider vinegar
3 tablespoons brown sugar
2 tablespoons cornstarch
1 tablespoon grated ginger

Steps:

  • Spray a 3 or 4 quart slow cooker with cooking spray; place ribs, onions and garlic in cooker.
  • Cover; cook on low setting for 8 to 9 hours.
  • About 10 minutes before serving, remove ribs from slow cooker; place on serving platter and cover to keep warm.
  • In 2 cup microwave safe measuring cup, combine all sauce ingredients; mix well.
  • Stir in 3/4 cup juices from slow cooker; discard remaining juices.
  • Microwave sauce on high for 2 to 2 1/2 minutes or until mixture boils and thickens, stirring once halfway through cooking.
  • Pour sauce over ribs. To make them a bit sticky, I do it one of two ways depending on time. You can either drain all the grease from the crock pot and add the ribs and the sauce back to it, then cook on high uncovered for about another hour or if pressed for time, you can transfer the sauce covered ribs to a shallow baking pan and caramelize under the broiler, basting frequently.
  • (I can personally think of all sorts of things I might try adding to this, but until I have tried them out, I will wait to post them lol. Let me know how it turns out!).

Yield Makes 4 to 6 servings

Number Of Ingredients 10

3 1/2 pounds baby back pork ribs, cut between bones into individual ribs (18-20 ribs)
1 cup soy sauce, divided
9 garlic cloves, minced, divided
5 teaspoons cumin seeds, divided
3 teaspoons crushed red pepper flakes, divided
3 tablespoons vegetable oil
6 scallions (white and light-green parts separated from dark-green parts), finely chopped
1 1/2 cups fresh orange juice plus zest from 1 orange
3 tablespoons honey
Zest from 1 lemon and 1 lime

Steps:

  • Place ribs, 1/2 cup soy sauce, 3 minced garlic cloves, 2 teaspoons cumin seeds, and 1 teaspoon red pepper flakes in a large pot; add water to cover completely. Bring to a boil and immediately reduce to a simmer. Cover with lid ajar; cook until ribs are tender, about 2 hours. Drain ribs; set aside for 10 minutes.
  • Meanwhile, heat oil in a small saucepan over medium heat; add remaining 3 teaspoons cumin seeds and 2 teaspoons red pepper flakes. Toast lightly until fragrant, about 30 seconds; add remaining 6 minced garlic cloves and white and pale-green scallions. Sauté until just soft, about 2 minutes. Add remaining 1/2 cup soy sauce, orange juice, and honey. Bring to a boil and cook until sauce is thick, 12-15 minutes.
  • Preheat broiler. Line a rimmed baking sheet with foil. Place ribs on prepared sheet; brush with sauce. Broil until sauce bubbles, 2-3 minutes. Turn, brush with additional sauce, and broil until ribs are heated through and sauce is bubbling, 2-3 minutes longer. Transfer to a platter. Drizzle with remaining sauce. Sprinkle dark-green scallions and citrus zest over.

Tips:

  • Choose the right ribs: Use high-quality baby back ribs or spare ribs for this recipe. Baby back ribs are leaner and more tender, while spare ribs have more meat and a richer flavor.
  • Prepare the ribs properly: Remove the thin membrane from the back of the ribs to help them cook evenly. You can also trim any excess fat from the ribs, but don't remove all of it, as it helps add flavor and moisture to the meat.
  • Use a flavorful marinade: The marinade in this recipe is a combination of orange juice, jalapenos, garlic, and spices. It helps tenderize the ribs and infuses them with flavor. Be sure to let the ribs marinate for at least 30 minutes, or up to overnight.
  • Cook the ribs slowly: Ribs take time to cook, so be patient. Cook them low and slow in the oven or on the grill to ensure that they are cooked through and fall-off-the-bone tender.
  • Make a delicious glaze: The orange-jalapeno glaze in this recipe is what really makes these ribs stand out. It's a combination of orange marmalade, jalapenos, brown sugar, and spices. Brush the glaze on the ribs during the last 15-20 minutes of cooking to caramelize them and give them a beautiful shine.

Conclusion:

Orange-jalapeno glazed back ribs are a delicious and flavorful dish that is perfect for any occasion. They are easy to make and can be cooked in the oven or on the grill. Be sure to follow the tips in this article to ensure that your ribs turn out perfectly. Enjoy!
