CANDIED SWEET POTATOES WITH PECANS

Candied Sweet Potatoes with Pecans image

This is my favorite style of a Thanksgiving or Christmas time sweet potato side dish, since I'm not really a big fan of whipped sweet potatoes with marshmallow toppings. This is a very sweet dish (candied) but more to my liking. The spice and pecans add a whole new level of taste and texture.

ORANGE GLAZED SWEET POTATOES WITH PECANS

Orange Glazed Sweet Potatoes With Pecans image

Here is a great holiday side dish! Of course it can be made and enjoyed any time. My mom makes this. I prefer to mash the potatoes somewhat coursely or lumpy rather than as smoothly as typical mashed potatoes.

Time 2h15m

Yield 12 serving(s)

Number Of Ingredients 11

6 large sweet potatoes
6 tablespoons brown sugar, packed
2 eggs, beaten
1/4 cup orange juice
2 tablespoons unsalted butter, melted
1 teaspoon real vanilla extract
1/2 teaspoon salt
3 tablespoons unsalted butter, softened
1/2 cup brown sugar, packed
3/4 cup chopped pecans
9 pecan halves (optional)

Steps:

  • Preheat oven to 375. Bake potatoes until very tender -- about 1 hour and 20 minutes. Let cool, and reduce oven heat to 350.
  • Scoop potatoes out of peels and mash until desired texture. Stir in remaining ingredients and place in casserole dish (9 X 9).
  • Combine topping ingredients and sprinkle over potatoes. Bake until done at 350 -- about 1/2 hours.
  • Optional: stud with 9 pecan halves at even intervals before returning to oven, just to make it look pretty.

Tips:

  • Choose the right sweet potatoes: Look for firm, smooth sweet potatoes with no bruises or blemishes. Smaller sweet potatoes tend to be more tender and flavorful.
  • Scrub the sweet potatoes thoroughly: Use a vegetable brush to remove any dirt or debris from the skin of the sweet potatoes.
  • Poke the sweet potatoes with a fork: This will help the glaze penetrate the sweet potatoes and cook them more evenly.
  • Use a sharp knife to score the sweet potatoes: This will help the glaze adhere to the sweet potatoes and create a more caramelized exterior.
  • Don't overcrowd the baking sheet: Make sure there is enough space between the sweet potatoes so that they can cook evenly.
  • Roast the sweet potatoes until they are tender: The sweet potatoes should be easily pierced with a fork when they are done.
  • Make the glaze while the sweet potatoes are roasting: This will give the glaze time to thicken and develop its flavor.
  • Brush the sweet potatoes with the glaze: Brush the sweet potatoes with the glaze several times during the last 10 minutes of roasting.
  • Serve the sweet potatoes immediately: The sweet potatoes are best served hot and fresh out of the oven.

Conclusion:

Orange-glazed sweet potatoes with pecans are a delicious and healthy side dish that is perfect for any occasion. They are easy to make and can be tailored to your own taste preferences. Whether you like your sweet potatoes sweet or savory, crispy or soft, this recipe has you covered. So next time you're looking for a tasty and nutritious side dish, give orange-glazed sweet potatoes with pecans a try.
