Provided by Bobby Flay

Time 3h55m

Yield 4 servings

Number Of Ingredients 29

One 12-ounce can cola, such as Coke
1/4 cup fresh cilantro, coarsely chopped
1/4 cup soy sauce
2 tablespoons sesame oil
2 tablespoons rice vinegar
1/2 teaspoon coarsely ground black pepper
8 cloves garlic, chopped
1 1/2 pounds pork shoulder steak, no more than 3/4-inch thick, not trimmed
Boston lettuce leaves, for serving
Gojuchang Sauce, recipe follows
Quick Kimchi, recipe follows
1 head napa cabbage, halved and shredded thinly
1/3 cup rice vinegar
2 tablespoons fish sauce
1 tablespoon gochujang sauce
1 tablespoon honey
1 teaspoon grated ginger
3 cloves garlic, knife pureed
2 serrano chiles, seeded and chopped
1/2 cup chopped fresh cilantro
4 green onions, sliced
2 tablespoons gochujang sauce
1 tablespoon soy sauce
1 tablespoon rice vinegar
2 teaspoons honey
2 teaspoons toasted sesame seeds
1 teaspoon sesame oil
2 cloves garlic, finely chopped
2 green onions, halved lengthwise and thin sliced crosswise

Steps:

  • Whisk the cola, cilantro, soy sauce, sesame oil, vinegar pepper and garlic in a large baking dish. Add the pork and turn to coat. Cover the baking dish and marinate in the refrigerator for at least 2 hours and up to 8 hours.
  • Prepare the grill for indirect grilling, with part of the grill at high heat. Remove the pork from the marinade 30 minutes before grilling to take the chill off.
  • Grill the pork until charred, about 3 minutes. Flip the pork and grill for another 3 minutes. Both sides of the pork should be nicely charred. Move the pork to indirect heat, cover the grill, and cook for about 5 minutes until a meat thermometer inserted in the pork registers 150 degrees F. Remove the pork from the grill and set aside, loosely tended with foil, about 10 minutes.
  • Cut the pork, against the grain, into thin strips. Fill the lettuce leaves with some of the pork, a drizzle of the Gojuchang Sauce and top with the Quick Kimchi.
  • Put the cabbage in a large bowl. Make an ice bath in a larger bowl.
  • Combine the vinegar, fish sauce, gochujang, honey, ginger, garlic and chiles in a small saucepan. Bring the mixture to a simmer and immediately pour over the cabbage. Set the bowl of cabbage in the ice bath and cool, tossing occasionally. When the cabbage is cool, add the cilantro and onions.
  • Whisk the gochujang, soy sauce, vinegar, honey, seeds, sesame oil, garlic and onions in a small bowl.

Time 6h10m

Yield 6 to 8 servings

Number Of Ingredients 31

One boneless half leg of lamb (about 4 pounds), butterflied
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
4 cloves garlic, thinly sliced
1 cup pomegranate juice
1 cup red wine
1/2 cup extra-virgin olive oil
2 tablespoons chopped fresh oregano
2 tablespoons chopped fresh rosemary
1 Spanish onion, chopped
2 bay leaves
Juice of 1 lemon
1 cup pomegranate molasses
2 tablespoons finely chopped fresh mint
2 tablespoons Dijon mustard
Juice of 2 lemons
1/4 cup fresh lemon juice
1/4 cup extra-virgin olive oil
2 tablespoons finely chopped fresh dill, plus for garnish
1 teaspoon honey
2 cloves garlic, chopped to a paste
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
1 cup finely shredded red cabbage
1/2 head green cabbage, shredded
1 large carrot, grated
6 ounces crumbled Greek feta
8 warmed pita breads, with or without pockets, for serving
Cherry tomatoes, on soaked skewers, for serving
Canola oil, for brushing
2 lemons, for serving

Steps:

  • For the rotisserie lamb with pomegranate and mint: Sprinkle both sides of the lamb with salt and pepper. Roll the lamb and tie with twine. Cut small slits over the entire lamb, using a paring knife. Fill each slit with a slice of the garlic. Put the lamb into a large plastic resealable bag.
  • Whisk the pomegranate juice, wine, olive oil, oregano, rosemary, onions, bay leaves and lemon juice in a bowl and sprinkle with salt and pepper. Pour the marinade over the lamb, in the bag. Press the air out of the bag and seal tightly. Place the bag into a large bowl. Refrigerate the lamb for at least 4 hours and up to 24 hours, turning the bag a few times during that time.
  • Remove the lamb from the refrigerator 30 minutes before cooking. Preheat the grill to medium-hot heat.
  • Whisk the pomegranate molasses, mint, mustard and lemon juice in a medium bowl and sprinkle with salt and pepper.
  • Skewer the lamb onto the rotisserie and grill until a meat thermometer registers 135 degrees F for medium doneness, 1 1/2 hours to 1 3/4 hours. Begin brushing the lamb with the pomegranate molasses mixture after about 45 minutes of grilling.
  • Meanwhile for the Greek slaw: Whisk together the lemon juice, olive oil, dill, honey and garlic in a large bowl. Sprinkle with salt and pepper. Add the red and green cabbage, carrot and feta. Toss to combine. Cover the slaw and refrigerate for at least 30 minutes before serving.
  • Transfer the lamb to a cutting board and loosely tent with foil. Wait 15 minutes before slicing.
  • While the lamb is resting, brush the tomatoes with canola oil and sprinkle with salt and pepper. Grill the tomatoes until they are charred on both sides and just soft, about 4 minutes.
  • Slice the lamb. Lay the warm pita breads on a large platter. Top with sliced lamb, grilled tomatoes and the Greek slaw. Squeeze the lemons over the top and serve.

SOUR ORANGE GLAZED DUCK WITH HERB CREPES

Sour Orange Glazed Duck with Herb Crepes image

Provided by Bobby Flay

Categories     main-dish

Time 4h41m

Yield 10 servings

Number Of Ingredients 25

1 Peking duckling (Long Island), about 5 pounds
Kosher salt and freshly ground black pepper
1 orange, zested
1 lemon, zested
1 lime, zested
1 small onion, halved
Sour Orange Glaze, recipe follows
Herb Crepes, recipe follows
Watercress, for garnish
4 cups fresh orange juice
2 cups fresh lemon juice
1 cup fresh lime juice
6 cloves garlic, finely chopped
1 tablespoon whole fennel seeds
1 teaspoon whole black peppercorns
2 large eggs
3/4 cup milk
1/2 cup water
1 cup flour
1/4 teaspoon salt
1/8 teaspoon freshly grated black pepper
2 tablespoons finely chopped fresh thyme
2 tablespoons finely chopped fresh parsley
3 tablespoons melted butter
Butter, for coating the pan

Steps:

  • Preheat oven to 300 degrees F.
  • A day before roasting, remove the giblets and neck from the cavity of the bird and discard. Trim the neck flap and excess fat from around the cavity. Rinse and dry the bird well. Set the duck on a rack on a baking sheet, and refrigerate, uncovered, for 24 hours.
  • Pierce the duck skin all over (including the back), every 1/2-inch, with a skewer or small knife. Season the cavity with salt and pepper and stuff with strips or orange, lemon and lime zest and the onion. Set the duck on the rack in a roasting pan, and pour a cup of water in the pan. Roast the bird for 3 hours, removing the duck from the oven every hour to prick the skin again. Remove the duck from the oven and carefully, pour off the excess fat from the pan. (If desired reserve this fat for frying potatoes or wilting greens). Raise the oven temperature to 450 degrees F. Return the duck to the oven and roast until crisp and brown, about 30 minutes more. During the last 20 minutes of roasting, brush the duck with 1 cup of the orange glaze.
  • Let the duck rest for 20 minutes before carving. Brush the ducks skin with glaze 4 to 5 times during the resting period. Carve the duck and transfer pieces to warm serving platter. Serve the remaining glaze at the table to drizzle over the duck, if desired.
  • Brush the surface of the crepe with some sour orange glaze. Place a few slices of duck in the center of the crepe and top with a few sprigs of watercress. Fold over and roll up and serve.
  • Place the juice, garlic, fennel and peppercorns in a medium saucepan and cook over medium-high heat until reduced to 2 cups. Strain the sauce into a bowl and let cool to room temperature. Once cooled, remove 3/4 cup and place in bowl to serve with the crepes.
  • In blender, combine all of the ingredients and pulse for 10 seconds. Place the crepe batter in the refrigerator for 1 hour. Heat a small non-stick pan over high heat. Add butter to coat. Pour 1-ounce of batter into the center of the pan and swirl the spread evenly. Cook for 30 seconds and flip. Cook for another 10 seconds and remove to the cutting board. Lay them out flat so they can cool. Continue until all the batter is gone.

Time P1DT3h35m

Yield 2 servings

Number Of Ingredients 23

2 (6-ounce) beef shortribs 2 inches in height
2 ounces soy sauce
3 ounces dark beer
2 tablespoons sugar
1 tablespoon olive oil
1 tablespoon red wine vinegar
1/4 inch slice ginger
1 lemon, zested
4 cloves garlic
1 ounce olive oil
3 cups veal stock
3 ounces horseradish, peeled and sliced
4 tablespoon creme fraiche
1 teaspoon lemon juice
1 1/2 cups frissee salad, washed and soaked in ice water
6 ounces boneless ribsteak, all fat removed, trimmed into rectangular shape
1 ounce olive oil
1/4 cup large diced carrots
1/4 cup large diced turnips
1/4 cup large diced zucchini
2 sprigs thyme
1 clove crushed garlic
3 tablespoons olive oil

Steps:

  • Combine all ingredients and marinate the shortribs for 24 hours, turning 2 or 3 times. Remove the ribs from marinade. Sear in 1 ounce olive oil on the 3 sides without the bone.
  • Transfer the shortribs and marinade to a suitable size baking dish and add the veal stock to cover the meat. Cover with aluminum foil and bake in a 325 degree F oven for 3 to 3 1/2 hours or until the meat is tender.
  • Remove the meat from the liquid and strain the sauce, discarding the solids. Reduce the liquid by one third until thickened to a sauce consistency. Hold warm.
  • Pulse the horseradish in a bar blender and add the creme fraiche. Let steep overnight. The next day, pass through a chinois, season with salt and pepper. Discard solids. In a small mixing bowl, combine the creme fraiche with a few drops of the lemon juice. Add the frissee and mix well, season with salt and pepper.
  • Season the steak with salt and pepper. Sear in a hot saute pan in the olive oil for 30 seconds on each of the four sides, until well browned but rare in the middle. Transfer to a wire rack to rest the meat.
  • Cook the vegetables over medium heat in the olive oil, adding the carrots and turnips first, zucchini last. Add the thyme and garlic and cook until the vegetables are lightly caramelized.
  • Remove garlic and thyme and hold warm.
  • Assembly: Slice the ribsteak into fourteen open slices, seven for each plate. Put one shortrib on each plate, discarding any excess fat. Divide the frissee salad between the two plates, and place between the two meats. Sprinkle the root vegetables over the ribs. Sauce both plates using the reduced braising liquid.

Time 2h

Yield 4 servings

Number Of Ingredients 35

3/4 cup plus 2 tablespoons canola oil
1/3 cup rice wine vinegar
1/3 cup soy sauce
1 tablespoon plus 1 teaspoon chili-garlic paste
2 cups Bulgogi Marinade, recipe follows
1/3 cup sesame oil
1 tablespoon salt, plus more to taste
12 bone-in flanken short ribs
1/2 head kimchi, optional, recipe follows
1/4 cup butter
4 cups cooked white rice
8 ounces green cabbage, shredded
3 ounces red cabbage, shredded
Sesame seeds, optional
1/2 cup soy sauce
3 tablespoons packed brown sugar
2 tablespoons plus 1 teaspoon sesame oil
3 to 4 cloves garlic, peeled
1 1/4-inch ginger, peeled
2 1/2 green onions, roughly chopped
1/2 sweet onion, outer layer removed
1/2 pear, cored
1/2 apple, cored
2 tablespoons plus 1 teaspoon mirin
3 heads Napa cabbage
2 cups water
2 tablespoons glutinous rice flour (or all-purpose flour if you don't have rice flour)
2 tablespoons brown sugar
1 cup kosher salt
2 tablespoons oyster sauce
4 cloves garlic, peeled
1/2-inch piece ginger, peeled and roughly chopped
1/2 to 1 1/2 cups gochujaro (depending on how spicy you want your kimchi)
1 1/2 cups julienned daikon radish
1 cup julienned green onions

Steps:

  • For the ribs: Preheat the oven to 400 degrees F.
  • In a medium bowl, whisk together 3/4 cup canola oil, rice wine vinegar, soy sauce and chili-garlic paste to make a vinaigrette. Measure out 1/3 cup of the mixture and set aside, reserving for later. Add Bulgogi Marinade, sesame oil, and salt to the bowl; whisk to combine. Place ribs in a 9-by-13-inch pan, in two even layers. Pour sauce over ribs, shuffling the ribs around to ensure the sauce coats every side of every rib. Cover the pan securely with foil. Bake the ribs until the meat is tender and almost falling off the bone, about 1 hour and 20 minutes. To check ribs for doneness, lift corner of the foil and plastic wrap and use a fork to try to pick up a rib. If the meat is not yet done, replace plastic wrap and foil and place ribs back in oven for an additional 15 minutes. Remove ribs from oven.
  • For the sides: Chop the kimchi into 1/2-inch pieces. Heat a large saute pan over medium-high heat; add the remaining 2 tablespoons canola oil. Add the butter and kimchi to the pan. Stir until the kimchi is caramelized and turns golden brown, about 5 minutes. Add the rice and stir well to combine. Cook until the rice fully absorbs the liquid from the kimchi and the flavors are incorporated, about 5 to 8 minutes. Add salt to taste. Remove from heat. Place the green and red cabbage in a medium bowl. Pour the reserved 1/3 cup vinaigrette over the cabbage and toss to coat.
  • Divide the kimchi rice equally among four plates, placing it in a pile on one side of each plate. Do the same with the cabbage slaw, placing it next to the kimchi rice on each plate. Using a large spatula, gently remove ribs from the pan and place 3 ribs on top of the rice and slaw. Sprinkle with sesame seeds if using.
  • Place soy sauce, brown sugar, sesame oil, garlic, ginger, green onions, onion, pear, apple, and mirin in a blender and blend until pulpy but not liquified. Refrigerate in an airtight container until ready to use.
  • Use a knife to slit the bottom of each cabbage an inch into the base. Set knife aside. With your hands, rip each cabbage in half lengthwise. Submerge the cabbage halves in water for 15 minutes. While cabbage soaks, put the 2 cups water and flour into a pan on the stove on high heat; bring to a boil, stirring constantly. When water reaches a boil, reduce heat to medium and simmer until the liquid coats the spoon, about 10 to 15 minutes. Remove from heat and stir in brown sugar. Set aside to cool.
  • Remove cabbage from water, and shake off any excess water; place cabbage in a large bowl. Sprinkle and massage salt into each individual cabbage leaf. Let sit for 1 hour, turning cabbage every 15 minutes. Pour the cooled flour mixture into a blender. Add the oyster sauce, garlic cloves and ginger; blend until smooth. Pour into a bowl and stir in the gochujaro, daikon radish, and green onions. Rinse the cabbage in the sink to remove salt, and squeeze or shake out any excess water. Rinse bowl and return cabbage to the bowl. Using gloves (repeat: using gloves), massage paste in between each cabbage leaf. After working paste into each half of cabbage, place cabbage into a prepared kimchi vessel and press it down to the bottom as far as it will go. When all the cabbage is in the vessel, add any remaining paste to top of the cabbage. Make sure there is a weight to keep the cabbage below the level of the liquid. Replace lid or close bag, whichever is needed for the type of vessel being used; be sure there is ability for air to escape. Place a baking sheet underneath kimchi vessel before storing it to catch any liquid that may overflow during the fermentation process. Store kimchi container in a dark, out-of-the-way place at room temperature for 24 hours. Check after 12 hours to make sure cabbage is submerged in the liquid; if not, press cabbage down into the liquid.
  • After 24 hours, place kimchi container in the refrigerator. Let kimchi sit for a minimum of 7 days before eating, checking and pressing down every 3 days. The longer the kimchi is allowed to sit and ferment, the stronger the flavor; the sweet spot is around 20 days.
  • Note: There are a variety of vessels you can use to make kimchi. You can use a traditional earthenware jar, food-safe bucket, or even a large bowl or food storage container. Make sure your vessel is large enough to have room at the top for the fermentation process to happen. I suggest a clean black garbage bag as a liner to any container you use so it creates a dark environment, and it's easy to check because you can unwrap and retie it easily. For your weight, use anything heavy that fits inside the top of the container; I use a brick wrapped in foil.

Tips:

  • Choose the right short ribs: Look for short ribs that are well-marbled with fat, as this will help them stay moist during cooking.
  • Brown the short ribs well: Browning the short ribs before braising them will help develop their flavor.
  • Use a good quality orange marmalade: The quality of the orange marmalade will have a big impact on the flavor of the glaze, so choose a marmalade that you enjoy the taste of.
  • Cook the short ribs until they are fall-off-the-bone tender: This will take at least 2 hours, but it is worth the wait.
  • Make the kimchi slaw ahead of time: This will allow the flavors to meld and develop.
  • Serve the short ribs with the kimchi slaw and steamed rice: This is a delicious and satisfying meal.

Conclusion:

Orange-glazed short ribs with kimchi slaw is a flavorful and impressive dish that is perfect for a special occasion. The short ribs are fall-off-the-bone tender and the kimchi slaw is a refreshing and tangy accompaniment. This dish is sure to please everyone at the table.
