1 orange, zested, juiced
2 garlic cloves, peeled, chopped
1 teaspoon kosher salt
Freshly ground black pepper
2 Cornish hens, split, backbones removed

  • Baste the Cornish Hens: Baste the Cornish hens with the orange glaze every 15-20 minutes while they are roasting. This will help to keep them moist and flavorful.
  • Let the Cornish Hens Rest: Once the Cornish hens are cooked, remove them from the oven and let them rest for 10 minutes before serving. This will help the juices to redistribute throughout the hens.
