Steps:
- 1. Combine Cajun Seasoning, Brown Sugar and Kosher Salt in a small bowl. On a piece of wax paper spread out your Salmon Fillets, rub mixture liberally over all surfaces of the fish.
- 2. In a large non-stick skillet heat two TBS of vegetable oil over med-high heat. Saute fillets over med-high heat for 4 minutes, turn and saute an additional 3 minutes. Turn off heat and add your marmalade and lime juice to the pan, swirl until melted, and carefully glaze your fish on all sides
- 3. Plate these beautiful fillets of Salmon with fresh Lime slices and Home-Style Fries....OH MY GOODNESS!!!
Tips:
- Choose the Right Salmon Fillets: Select firm, opaque fillets with no signs of discoloration. Fresh, wild-caught salmon is preferred for its superior flavor and texture.
- Marinate the Salmon: Marinating enhances the flavor of the salmon and helps it stay moist during cooking. Use a flavorful mixture of olive oil, citrus juice, herbs, and spices to create a marinade that complements the Cajun seasoning.
- Use a Cast Iron Skillet: A cast iron skillet is ideal for searing salmon because it retains heat evenly and creates a beautiful crust. If you don't have a cast iron skillet, you can use a heavy-duty nonstick skillet instead.
- Sear the Salmon Skin-Side Down: Searing the salmon skin-side down helps to render the fat and create a crispy skin. Be patient and let the salmon sear undisturbed for 3-4 minutes before flipping.
- Make the Orange Glaze: While the salmon is cooking, prepare the orange glaze. Combine orange juice, honey, soy sauce, and cornstarch in a saucepan and bring to a simmer. Cook until the glaze has thickened and become slightly syrupy.
- Glaze the Salmon: Once the salmon is cooked through, brush the orange glaze over the top. This will add a delicious citrusy sweetness and glaze to the salmon.
- Serve with Sides: Serve the glazed salmon with your favorite sides, such as roasted vegetables, steamed rice, or a fresh salad.
