10 large sweet potatoes (approx. 5 lbs)
3/4 cup butter
1/3 cup dark brown sugar (packed)
1/4 cup honey
1/4 cup orange marmalade
2 tablespoons candied ginger (minced)
1 1/2 teaspoons salt
1 teaspoon black pepper
1/4 cup dark rum (optional)

Steps:

  • Preheat oven to 375F.
  • Bake potatoes on a cookie sheet until soft (approx. 1.5 hrs).

1/2 can(s) frozen orange juice concentrate
optional ( 2 t triple sec)
2 tsp salt
1 stick butter
1 Tbsp brown sugar

  • 1. Peel and slice sweet potatoes in approx. 1/4 inch slices.
  • 2. In a large deep (approx 3-4") skillet add 1/2 can orange juice concentrate and grated ginger on medium heat and simmer for about 5 minutes
