6 scallions, thinly sliced
1 red bell pepper, cored and thinly sliced lengthwise
1/2 small head napa cabbage, thinly sliced crosswise
1/2 small head iceberg lettuce, shredded
2 cups (about 4 ounces/115 grams) bean sprouts
One 8-ounce/227-gram can sliced water chestnuts, coarsely chopped
1/2 cup coarsely chopped fresh cilantro leaves
1/2 cup roasted unsalted peanuts or soybeans
1 cup crispy chow mein noodles
2 large navel oranges
2 tablespoons hoisin sauce
2 tablespoons rice wine vinegar
1 teaspoon grated fresh ginger
1 small clove garlic, grated
3 tablespoons vegetable oil
Kosher salt and freshly ground black pepper

Steps:

  • For the salad: Remove the skin from the chicken and shred the meat with a fork. Toss in a large bowl along with the scallions, red pepper, cabbage, lettuce, bean sprouts, water chestnuts, cilantro, peanuts and chow mein noodles. With a sharp knife, cut the peel from one of the oranges, then cut the segments away from the membranes. Coarsely chop the segments, then add them to the bowl. Grated zest of 1 lemon, then lemon cut into quarters
Grated zest of 1 orange, then orange cut into quarters
3 tablespoons peeled and grated fresh ginger root
Salt and freshly ground black pepper
5 tablespoons margarine, melted, or olive oil
4 tablespoons fresh lemon juice
1/2 cup fresh orange juice
3 tablespoons honey
Orange sections for garnish

Steps:

  • Preheat an oven to 350ºF.
  • Cut the lemon into quarters. Rub the outside of the chicken with one of the lemon quarters, then discard. In a small bowl, stir together the lemon and orange zests and 1 tablespoon of the grated ginger. Rub this mixture evenly in the cavity. Put the lemon and orange quarters inside the bird. Place the chicken on a rack in a roasting pan. Sprinkle it with salt and pepper. 3/4 cup orange juice
1/3 cup soy sauce
1 tablespoon brown sugar
1 tablespoon Splenda sugar substitute
1 tablespoon gingerroot, grated
1 1/2 tablespoons cornstarch
1 orange, sliced
2 tablespoons parsley, snipped

Steps:

  • Preheat oven to 350 degrees.
  • Arrange chicken breast in a single layer, top side up, in a baking dish.
  • In a small bowl combine orange juice, soy sauce, brown sugar and ginger.
  • Pour over the Chicken.
  • Bake for 35 minutes.
  • Remove chicken from pan.

1 cup panko breadcrumbs (Japanese bread crumbs) or 1 cup other fine dry breadcrumb
4 boneless skinless chicken breast halves (each 6 to 7 oz.)
kosher salt
fresh ground black pepper
about 2 tbsp. butter
about 2 tbsp. olive oil
1 cup chopped shallot
1 1/2 tablespoons chopped ginger
1 1/2 tablespoons chopped garlic
1 cup reduced-sodium chicken broth
1/2 cup dry white wine
1/2 cup orange juice (use fresh oranges and reserve peel for pilaf)

Steps:

  • Preheat oven to 375°. Put flour and coconut milk in separate wide, shallow bowls. In another bowl, mix nuts and panko. Rinse chicken and pat dry. Sprinkle all over with salt and pepper.
  • Put 2 tablespoons butter and 2 tablespoons olive oil in a large frying pan over medium heat. Dredge chicken in flour, shaking off excess; dip into coconut milk, letting excess drip off; then press into nut mixture to coat on all sides. Reserve coconut milk. 3 teaspoons Thai sweet chili sauce (or bottled chili paste)
1/4 cup sherry wine (you can substitute white wine, but add more sugar)
1 tablespoon sugar
1 tablespoon cornstarch
vegetable oil
3 cloves crushed garlic
1 1/2 tablespoons minced fresh ginger

Steps:

  • Halve the peppers, remove the ribs and seeds, and cut into strips.
  • Using vegetable peeler, remove the rind (orange part only) from the orange.
  • Cut the rind into very thin julienne strips about 3 inches long.
  • Squeeze the orange.
  • Add more frozen juice if necessary to make 3/4 cup.
  • In a bowl, combine orange juice, chili sauce, sherry, sugar, and cornstarch.Stir until smooth

2 cups flour
3 teaspoons seasoning salt

1/3 cup vegetable oil
2 cups orange marmalade

  • In a large resealable plastic bag, combine the flower, seasoned salt and garlic salt. Add the chicken wings, a few at a time, and shake to coat.
