2 cups blanched almond flour
⅓ cup butter, melted
3 tablespoons powdered erythritol sweetener
1 teaspoon vanilla extract
4 (8 ounce) packages cream cheese, softened
1 ¼ cups powdered erythritol sweetener
3 large eggs
1 tablespoon lemon juice
1 teaspoon vanilla extract
¼ teaspoon lemon zest

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch springform pan. Line the bottom with parchment paper. Wrap the bottom and sides of the pan with aluminum foil if worried about leakage.
  • Stir almond flour, butter, erythritol, and vanilla extract together in a small bowl until well combined; the mixture will be crumbly. Press into the prepared pan bottom.
  • Bake on the center rack until in the preheated oven until just golden, 10 to 12 minutes. Allow to cool for 10 minutes.
  • Meanwhile, beat cream cheese and powdered sweetener together using an electric stand or hand mixer at low speed until fluffy. Beat in eggs, 1 at a time. Add lemon juice, vanilla extract, and lemon zest. Beat until well combined.
  • Bake on the center rack in the preheated oven until center is almost set and slightly jiggly in the center, 45 to 55 minutes.
  • Remove from the oven and let cool in the pan. Keep in the pan, cover, and refrigerate to fully set, at least 4 hours, to overnight. Run a knife gently around the sides to remove, unclamp, and carefully remove the pan; it should come right off.

1 pkg graham crackers
2/3 c hot water
1 pkg (4 oz) sugar free orange jello mix
1 c low fat cottage cheese
8 oz cream cheese, low-fat
2 c fat free cool whip

Steps:

  • 1. Crush graham crackers and press in bottom of 9 inch springform pan sprayed with cooking spray
  • 2. Stir boiling water in dry jello mix in large bowl and mix for 2 minutes or until completely dissolved. Cool 5 minutes
  • 3. Pour jello mix into blender. Add both cheeses and blend until smooth.
  • 4. Pour mixture into large bowl and gently stir in whipped topping
  • 5. Pour in pan and smooth.

1/4 cup graham wafer crumbs
2/3 cup boiling water
1 (10 1/4 g) package sugar-free orange gelatin
1 cup 1% fat cottage cheese
1 (250 g) container light cream cheese spread
2 cups Cool Whip Lite, thawed

Steps:

  • Sprinkle the graham wafer crumbs onto the bottom of an 8" or 9" springform pan, or a 9" pie plate sprayed with no stick cooking spray.
  • Stir boiling water into orange jelly powder in a large bowl, stirring for at least 2 minutes until the powder is completely dissolved.
  • Cool for 5 minutes.
  • Pour this into a blender, then add cheeses.
  • Cover and blend on medium speed until well blended.
  • (Scrape down sides of the blender occasionally).

2 8-ounce packages fat-free cream cheese, softened
1 1/2 cups sugar
1 cup reduced-fat sour cream
2 large eggs plus 3 egg whites
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
1 teaspoon finely grated lemon zest

Steps:

  • Preheat the oven to 350 degrees F. Wrap the outside of a 9-inch springform pan with foil to prevent leaks. Coat the inside of the pan with cooking spray.
