6 bone-in chicken breast halves (7 ounces each), skin removed
1 tablespoon butter, melted
1 garlic clove, minced
1 teaspoon dried basil
1/2 teaspoon salt
1/8 teaspoon pepper
1 medium onion, thinly sliced
1 medium navel orange, thinly sliced
3 tablespoons brown sugar
2 teaspoons cornstarch
1/2 cup orange juice
3 tablespoons soy sauce

Steps:

  • Preheat oven to 350°. Place chicken in a 13x9-in. baking dish coated with cooking spray. Combine butter, garlic, basil, salt and pepper; drizzle over chicken. Arrange onion and orange slices on top. Bake, uncovered, 50 minutes., In a small saucepan, combine brown sugar, cornstarch, orange juice and soy sauce until smooth. Bring to a boil; cook and stir for 1-2 minutes or until thickened. , Drain chicken; brush with orange juice mixture. Bake 15-20 minutes or until a thermometer reads 170°.

8 1/2 ounces freshly squeezed orange juice, divided
1/2 orange, zest finely grated
1/2 cup whole milk
1 tablespoon powdered sugar
1/2 teaspoon vanilla extract

Steps:

  • Pour 6 1/2 ounces of the orange juice into an ice cube tray and freeze until solid, approximately 2 hours. Store the remaining 2 ounces of juice and the zest in an airtight container in the refrigerator until ready to use.
  • In the carafe of a blender combine the frozen juice cubes, reserved orange juice and zest, milk, powdered sugar and vanilla, and blend until smooth and slushy, 30 to 45 seconds. Serve immediately.

2 eggs
1 1/4 c sugar
1 Tbsp fresh orange zest (the zest of 1 orange)
1/2 c fresh orange juice
1/2 c oil or margarine or butter (i use vegetable oil)
1/2 c yogurt
2 c flour
2 1/4 tsp baking powder
1/4 tsp salt

Steps:

  • 1. -Preheat oven to 300F -Mix all ingredients together and pour them into a greased and floured pan. -Bake for 45 minutes or until cooked.
  • 2. *This cake is versatile, you can substitute oranges with lemons, mandarins, clementines etc. *Feel free to add dried fruits, raisins, nuts etc. I personally like it simple and without any frosting. *This cake freezes very well. When completely cold, wrap it with wax paper then with cling film and freeze it. When ready to eat it, just take it out of the freezer and let it thaw in room temperature for a couple of hours.
