Blooming spices
1/2 tsp cumin
1/2 tsp cumin seed
1/2 tsp coriander seed
1/2 tsp garam masala

1/4 tsp oregano

1/2 tsp sweet paprika
1 1/2" piece of ginger peeled and chopped fine
4 cloves garlic mashed into paste
1 jalapeño seeded and diced fine
1 medium onion
4 carrots cut on bias
1 1/2 cups orange juice
1 1/2 cups water
1 bunch cilantro
2 bay leaves
1 whole chicken quartered
2 tbls butter
1 tsp salt
1/2 tsp pepper

  • 1. Heat olive oil in cast iron skillet on medium high. Add cumin, cumin seed, corriander seed, garam masala, ground mustard, oregano, cinnamon, turmeric and paprika.
