Time 55m

Yield 6 muffins, 4-6 serving(s)

Number Of Ingredients 10

1 tablespoon orange zest (from a large navel orange)
3/4 cup milk
1/4 cup vegetable oil
1 large egg
2 cups all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup fresh cranberries, coarsely chopped using blender
1/2 cup pecan pieces

Steps:

  • Preheat oven to 400 degrees for a 6 cup muffin pan or 375 degrees for a dark, non-stick muffin pan.
  • Grease bottoms of jumbo muffin pan with vegetable shortening.
  • Prepare orange zest in a large bowl. Beat orange zest, milk, oil and egg with a wire whisk until well mixed. Using a large spoon, blend four, sugar, baking powder and salt and add all at once to liquid mixture, stirring just until flour is moistened. Batter will be lumpy; do not overmix.
  • Wash 1 cup cranberries. Put in blender on Chop (lowest setting) for 2 seconds ONLY. Fold in cranberries and nuts into muffin batter. Divide among 6 jumbo juffin cups.
  • Bake 20 to 25 minutes until a round toothpick pressed in the center of the muffin comes out clean. Let muffins cool about 5 minutes, then turn out onto a wire rack. Serve warm with butter.

Tips:

  • Mise en Place: Before starting, measure and prepare all ingredients according to the recipe. This will ensure a smooth and organized baking process.
  • Fresh Ingredients: Use fresh and high-quality ingredients for the best results. Fresh oranges and cranberries will provide the most vibrant flavors.
  • Muffin Tins and Liners: Grease or line muffin tins with paper liners to prevent sticking and ensure easy removal of muffins.
  • Don't Overmix: Overmixing can result in dense and tough muffins. Mix the batter until just combined, avoiding overdevelopment of the gluten in the flour.
  • Proper Baking Temperature: Preheat the oven to the specified temperature before baking. This ensures even cooking and prevents undercooked or overcooked muffins.
  • Toothpick Test: To check for doneness, insert a toothpick into the center of a muffin. If it comes out clean or with just a few moist crumbs attached, the muffins are ready.
  • Cooling Before Serving: Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely. This prevents them from breaking apart.

Conclusion:

Orange Cranberry Nut Muffins are a delightful treat that combines the tangy sweetness of oranges and cranberries with the nutty crunch of walnuts or pecans. They are perfect for breakfast, brunch, or a midday snack. With their moist, fluffy texture and vibrant flavors, these muffins are sure to be a hit with friends and family. By following the tips and recipe instructions carefully, you can easily create delicious and satisfying muffins that will brighten up any occasion. Remember to experiment with different nut varieties and add-ins to create your own unique muffin variations. Happy baking!
