Steps:
- For the chicken: In a large bowl, whisk together the cornstarch and egg whites with a fork until almost frothy, about 1 minute. Add the chicken to the mixture and allow to sit for 5 to 10 minutes.
- For the sauce: Meanwhile, put the orange juice, soy sauce, sugar, vinegar, sesame oil, salt, crushed red pepper, garlic and ginger in a small nonstick skillet and whisk. Heat until bubbling and starting to thicken, about 5 minutes.
- Whisk together the cornstarch and 1/4 cup water in a small bowl and add 1 to 2 tablespoons of the cornstarch slurry to the sauce. Mix in and thicken for 1 minute.
- Heat about 2 inches of vegetable oil in a heavy-bottomed Dutch oven until a deep-fry thermometer inserted in the oil registers 350 degrees F. Carefully drop the chicken into the oil and move it around, flipping gently, until golden, 3 to 4 minutes. Let the pieces drain on a plate lined with paper towels for 2 to 3 minutes. Then drop them back into the oil for 1 minute to really solidify the coating.
- Toss the chicken in the sauce and serve.

Steps:
- 1. Rinse chicken & cut into 1 - 1 1/2 inch cubes. Set aside. Preheat deep fryer to 325 degree. Or can add enough oil to fry in a deep skillet. In a medium bowl, mix all sauce ingredients & set aside. Only use 1/2 cup of water to start.
- 2. In another bowl, mix all batter for chicken, until smooth. It should be thick, but not so thick that it won't smoothly coat chicken. My measurements work perfectly for me. If too thick for you, add a little more water.
- 3. Once oil is hot, dip each piece of chicken and drop into fryer. ( May have to fry in batches ) depending on size of fryer. Fry for roughly 10 - 15 minutes or until golden and cooked through - I always test a piece.
- 4. Drain on paper towels. Repeat with remainder of chicken.
- 5. While chicken is cooking, prepare sauce and rice if serving. In a wok or skillet, bring sauce ingredients to a boil and simmer until thickening. I always add more water until I get right consistency. Up to you how thick you like your sauce.
- 6. Once chicken is finished cooking, place in a bowl and I pour some sauce over the chicken and carefully toss in the bowl, until chicken is coated. Can dip each piece, but my method is quicker.
- 7. Serve over rice if preferred and sprinkle with fresh cut green onions and more sesame seeds if desired.

Steps:
- 1. Brown chicken in the olive oil on high heat. Reduce to simmer, add rest of ingredientts and simmer for four minutes per side.
- 2. DO NOT LET JUICES RUN DRY, add more f needd. Serve with drippings over chicken.
- 3. I served this with a baked potato and a side salad and had supper on the table in under 25 minutes.
Tips:
- Use fresh oranges: Fresh oranges provide the best flavor for this dish. If you don't have fresh oranges, you can use bottled orange juice, but the flavor will not be as good.
- Zest the oranges before juicing them: Zesting the oranges before juicing them will help to release the essential oils from the peel, which will give the dish a more intense orange flavor.
- Use a good quality soy sauce: Soy sauce is a key ingredient in this dish, so it's important to use a good quality one. Look for a soy sauce that is naturally brewed and has a rich, savory flavor.
- Don't overcook the chicken: The chicken should be cooked until it is just cooked through, but not overcooked. Overcooked chicken will be tough and dry.
- Serve the chicken with rice or noodles: Orange chicken is traditionally served with rice or noodles. Rice is a good option if you want a more filling meal, while noodles are a good option if you want a lighter meal.
Conclusion:
Orange chicken is a delicious and easy-to-make dish that is perfect for a weeknight dinner. It is also a great dish to serve at parties or potlucks. With its sweet and tangy flavor, orange chicken is sure to be a hit with everyone who tries it.
