CHINESE ORANGE BARBEQUE CASHEW CHICKEN

Chinese Orange Barbeque Cashew Chicken image

one of my favorites from rachel ray. it's her version of home-made take-out

Provided by Melinda Stern

Categories     Main Dishes

Time 1h

Number Of Ingredients 14

2 Tbsp canola oil
1 1/2 lb boneless skinless chicken
1 red bell pepper (thinly sliced)
1 onion, chopped
2-3 clove garlic, finely chopped
2-3 Tbsp fresh grated ginger
1 Tbsp hot sauce
2 tsp tamari (soy sauce)
1/4 c hoisin
1/4 c orange marmalade
1/2 c chicken stock
1/2 c cashews
3 scallions, thinly sliced, on a bias
4 c cooked brown (or white) rice

Steps:

  • 1. Place a large skillet over medium-high heat with 2 turns of the pan of oil, about 2 tablespoons. Season the chicken with salt and pepper. When the pan is very hot, add in the meat and stir-fry until golden brown, about 5 minutes. Remove the meat from the pan and reserve on a plate.
  • 2. Add the bell pepper, onion, garlic and ginger to the skillet and stir-fry until tender, 3-4 minutes. While that's cooking up, stir together the hot sauce, tamari, hoisin sauce, orange marmalade and stock in a small bowl.
  • 3. When the veggies are tender, return the chicken to the skillet and pour the sauce over everything. Add the cashews to the skillet, toss to coat and continue cooking until the sauce thickens up, about 1 minute.
  • 4. Serve the stir-fry over brown rice, garnish with scallions.

Tips:

  • Use fresh oranges: Fresh oranges provide the best flavor for this dish. If you don't have fresh oranges, you can use bottled or frozen orange juice, but the flavor will not be as good.
  • Don't overcrowd the pan: When cooking the chicken, don't overcrowd the pan. This will prevent the chicken from cooking evenly and will make it more difficult to get a good sear.
  • Cook the chicken until it is cooked through: Use a meat thermometer to ensure that the chicken is cooked to an internal temperature of 165 degrees Fahrenheit.
  • Use a good quality orange marmalade: The orange marmalade is an important ingredient in this dish, so it's important to use a good quality marmalade. Look for a marmalade that is made with real oranges and has a good balance of sweet and sour flavors.
  • Serve the chicken with rice or noodles: Orange cashew chicken is a great dish to serve with rice or noodles. The rice or noodles will help to soak up the delicious sauce.

Conclusion:

Orange cashew chicken is a delicious and easy-to-make dish that is perfect for a quick and easy weeknight meal. The chicken is tender and juicy, and the sauce is sweet, tangy, and flavorful. This dish is sure to be a hit with your family and friends.
