OPEN-FACED FRICO EGG SANDWICH
Steps:
- For aioli, in a small bowl, combine the mayonnaise, olive oil, garlic, salt and pepper; set aside., Sprinkle Parmesan into large nonstick skillet; heat over medium heat. Cook just until melted, about 2 minutes. Break eggs, 1 at a time, into a custard cup or saucer, then gently slide into pan over Parmesan. Immediately reduce heat to low. To prepare eggs sunny-side up, cover pan and cook until yolks thicken but are not hard, 4-5 minutes., Spread aioli over toasted bread. Top with giardiniera, tomato and egg. Sprinkle with parsley.

Steps:
- 1. make basic white sauce; melt butter add flour and stir till smooth, add milk stir add cheese stir til smooth and thick. This amount will be enough for 2-3 sandwiches
- 2. cook bacon, ham or sausage and set aside. I used leftovers of bacon.
- 3. cook eggs anyway you want. While eggs are cooking split english muffin and toast. Butter muffins on each muffin add 1 slice of tomato,1 egg, 1/2 cheese sauce and top with bacon.
- 4. I serve open face. If using ham or sausage, place meat ontop of egg then add cheese sauce. This recipe is great to customize to any leftovers you have

- Preheat oven to 425°. In a large bowl, combine biscuit mix, cheese, ham and 1/2 teaspoon pepper. Add milk; mix just until moistened., Turn onto a lightly floured surface; knead gently 8-10 times. Found in the 1986 Sothern Living cookbook and modified a bit. We were very happily suprised with how a few little changes to egg salad can make such a difference. This is now one of my favorite dinners! Ofcoarse you could also make this for breakfast or lunch as well. Make the egg salad ahead of time and the meal is a snap. I usually just serve this with fruit or cucumber slices on the side.

- Peel and chop your eggs into a bowl, and add cheese through celery.
- Mix well. Refrigerate until dinner or go right along.
- Heat skillet to med/low heat.
- Spread sourdough slices with butter and toast on both sides.
- Remove to a baking sheet.
- Raise oven rack to top and set oven to broil.
- Top each slice of bread with egg salad and broil with oven door open 1-3 minutes or until cheese is melted (watch closely so bread doesn't burn).
- You could also use english muffin halves as the original recipe called for, but personally I think the sourdough adds a little something extra!

The only in-person experience you'll miss is waving goodbye to the bodega's owner and cat.

- Bring a large piece of parchment paper or foil to the stove. Heat a medium (10-inch) nonstick skillet over medium. Grease the skillet generously with butter. Place one side of the roll in the skillet, cut-side down, and toast until golden, 2 to 4 minutes. Transfer the toasted half to the parchment, cut-side up. Repeat with more butter and the other half of the roll. (The second side will take less time, as the pan gets hotter.)
- If you're using beef or turkey bacon, add 1 tablespoon butter to the skillet. Add the bacon and cook over medium until browned and crisp, 2 to 4 minutes per side. As the bacon cooks, press it down with a spatula. (This helps the fat render, producing crunchier bacon.) Turn off the heat and transfer the bacon to the bottom roll. Pour off all but 1 tablespoon of the fat.
- Pour the eggs into the skillet, season with salt and pepper and set over medium-low. Using a spatula, pull the egg toward the center and tilt the skillet so the egg runs to the empty part of the skillet. Repeat this all around until the surface of the egg is no longer runny but still shiny. Add the cheese on the top, tearing into smaller pieces for even coverage. Cook, undisturbed, until the top of the egg is matte, just a minute. Remove from heat, fold the egg in half, and then in half again. Transfer to the bottom roll.
- Add ketchup and hot sauce as desired, then add the top roll and press down. Wrap in the parchment, smush again, and let sit for a couple minutes for all the elements to steam together. Cut in half and eat.
