OPEN-FACED SEARED TUNA BURGER WITH WASABI MAYONNAISE

Open-Faced Seared Tuna Burger with Wasabi Mayonnaise image

These tuna burgers are best eaten very rare, so buy your sushi-quality tuna from a reputable fishmonger. The fish should be glistening and jewel-toned, with no trace of cloudiness. Wasabi paste, or Japanese horseradish, is distinctive not only for its bright green color, but also for its head-rushing heat. Combined with a little mayonnaise and low-fat sour cream, it becomes a perfect condiment for the tuna burgers. Wasabi is available in powder form, too, and can be mixed into a paste with a little water.

OPEN-FACE TUNA BURGERS

Categories     Sandwich     Tomato     Kid-Friendly     Quick & Easy     Lunch     Mayonnaise     Tuna     Pan-Fry     Bon Appétit     Small Plates

Yield Makes 4 Servings

Number Of Ingredients 11

1 12-ounce can solid white tuna packed in water, drained well
1/2 cup finely chopped green onions
1/3 cup (packed) fresh breadcrumbs
1/4 cup yellow cornmeal
8 tablespoons mayonnaise
1 large egg, beaten to blend
1 1/2 tablespoons Dijon mustard
4 slices rye, whole wheat or sourdough bread, toasted
4 small lettuce leaves
4 large slices tomato
1 tablespoon olive oil

Steps:

  • Place tuna in large bowl; break up finely with fork. Mix in green onions, breadcrumbs, cornmeal, 4 tablespoons mayonnaise, egg and mustard. Season with salt and pepper. Shape mixture into four 3/4-inch-thick patties.
  • Arrange bread on 4 plates. Spread each slice with 1 tablespoon mayonnaise; then top each with lettuce and tomato.
  • Heat oil in heavy large skillet over medium-high heat. Add tuna patties and cook until firm to touch and heated through, about 4 minutes per side. Place tuna on tomato slices and serve.

Tips:

  • Use high-quality tuna: Opt for tuna packed in water or olive oil rather than tuna packed in oil, as this will result in a lighter, flakier burger.
  • Add flavor to the tuna: Mix in herbs, spices, and seasonings to the tuna salad to enhance its flavor. Some good options include lemon zest, dill, capers, red onion, and celery.
  • Use a sturdy bread: The bread you use for your open-face tuna burgers should be able to hold up to the weight of the tuna salad without getting soggy. Good options include hearty whole-wheat bread, sourdough bread, or English muffins.
  • Toast the bread: Toasting the bread will help it to better hold up to the tuna salad and also add a nice crispy texture.
  • Don't overload the burgers: Be careful not to overload the burgers with too much tuna salad, as this will make them difficult to eat. A good rule of thumb is to use about 1/2 cup of tuna salad per burger.
  • Get creative with toppings: There are many different toppings that you can add to your open-face tuna burgers. Some popular options include lettuce, tomato, cucumber, avocado, and cheese.

Conclusion:

Open-face tuna burgers are a quick, easy, and delicious meal that can be enjoyed for lunch or dinner. They are a great way to use up leftover tuna, and they can be customized to your own liking. With a few simple tips, you can make open-face tuna burgers that are both tasty and satisfying.
