10 tablespoons unsalted butter, softened
3/4 cup sugar
1 egg
2 tablespoons milk
1 1/2 teaspoon vanilla
1 teaspoon baking powder
1/4 teaspoon salt
2 cups flour
30 maraschino cherries

Steps:

  • Line a small bowl with paper towel and place cherries inside to drain.
  • Preheat oven to 350 degrees.
  • Cream butter and sugar in mixing bowl. Add egg, milk, and vanilla, and mix to combine. Once combined, beat for 30 seconds.
  • Add salt and baking powder, and mix well. Then add the flour, and stir slowly until combined.
  • Scoop out cookies and drop onto cookie sheet.
  • Pick up a dough mound and carefully flatten into 2" disc.
  • Place a cherry in the center and fold edges up around it. Crimp and seal, then roll until nicely rounded.
  • Place on cookie sheet, and repeat for each mound. Place on two cookie sheets.
  • If dipping them in sugar, do so now.
  • Bake at 350 degrees 12-15 minutes until lightly golden around the edge and the outside is starting to crack.
  • Cool on cookie sheet 5 minutes, then move to a cooling rack to cool completely.
  • Store in an airtight container on the counter for up to a week.

I don't know where my mom got this recipe, but she has been making it for over 50 years, hence that's why I named it Opal's Surprise, after my mom..

CRUST
3 egg whites beaten stiff
1 c. sugar, add to beaten egg whites
fold in 12 crushed soda crackers
½ c. nuts
1 t. vanilla
1 t. vinegar

Steps:

  • 1. Crust:Pour in greased large pan. Bake at 350 for 30 minutes. Cool. Don't worry when the crust falls.
  • 2. Filling: 1/2 pint heavy whipping cream 1 (3 oz) Cream cheese softened at room temperature 1 c. sifted powdered sugar 1 t. Vanilla
  • 3. Using a mixer, whip the cream cheese. Then add the sifted powdered sugar and heavy whipping cream alternately a little at a time until thick. Before you have added all the powdered sugar to the cream sugar, add the vanilla. Do not beat the ingredients too long or you will make butter. Pour the filling on top of the cracker crust.
  • 4. Then top with Cherry Pie Filling..

01 box confectioners' sugar
02 c pecans, halved
02 box cream cheese, room temperature
1 1/2 pt whipping cream
01 stick butter
2 box graham crackers, crumbs
1 1/2 c half and half
02 can(s) cherry pie filling
01 pkg of cool whipped topping thawed

Steps:

  • 1. mix cream cheese and half box of confectioners sugar,half & half milk and whipping cream and let stand
  • 2. next melt butter and mix it and the other half of cofectioners sugar with graham crackers crumbs along 1 cup of pecans pour in pan and mash to cover whole baking dish bottom. heat for about 10 mins on 200 take out let cool. now pour the cream cheese mixture over your graham cracker crust
  • 3. now pour cherry pie filling over this and then spread thawed cool whip over this and layer it with rest of the pecans,and now your finished.
