Time 20m

Yield 8 slices, 4 serving(s)

Number Of Ingredients 10

8 slices challah, sliced 3/4-inch thick, staled
1 1/2 cups whole milk
3 large eggs (or 6 egg yolks)
2 tablespoons brown sugar
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/8 teaspoon freshly ground nutmeg
2 dashes pepper (2 grinds)
1 tablespoon vanilla
6 tablespoons unsalted butter, divided

Steps:

  • Night before slice bread no thinner than 1/2" thick, we prefer 3/4" thick. Lay out on cooling rack to let stale overnight. This can also be done by slicing bread morning of preparation, laying on cooling rack on cookie sheet and placing in oven 250º for 15 minutes, turning once while in oven.
  • In 9x13 dish whisk together milk, eggs, brown sugar, salt, cinnamon, nutmeg, pepper, vanilla and 2 tablespoons melted butter until blended well. Set aside.
  • Heat 1/2 tablespoon butter in 12" skillet or griddle over medium heat. While butter is melting, soak 2 slices of bread at a time for no more than 20 seconds per side. You want them well saturated but not falling apart or a glob of dough.
  • When butter is melted and no longer foaming, transfer bread slices to skillet using a slotted spatula (allowing excess custard mixture to drip off). Cook to golden brown, approximately 3-4 minutes per side. If cooking to fast, i.e. browning or burning, reduce your temperature. Remove from skillet and place on cooling rack in 200º oven and continue with remaining bread.
  • *Tip - wipe skillet/griddle out with paper towels between each cooking of the french toast.
  • Serve with warmed maple syrup.

Time 52m

Yield 4 serving(s)

Number Of Ingredients 8

1 1/2-2 lbs bone-in skinless chicken breasts
salt and pepper
2 tablespoons butter
1 medium onion, large dice
8 ounces fresh mushrooms, large slice
8 ounces sour cream
1 (10 ounce) can cream of chicken soup
1/2-3/4 cup marsala or 1/2-3/4 cup sherry wine

Steps:

  • Preheat oven to 400 degrees.
  • Sprinkle the chicken with seasonings to taste. Brown well in the butter on both sides. Place chicken in baking dish. Sprinkle mushrooms and onions over chicken. Combine remaining ingredients well and pour over all.
  • Bake, uncovered, for 45 minutes.
  • Note: I usually baste the chicken with the sauce once or twice to keep it moist. Very good SHTUFF, as my husband says.

Yield 10 serving(s)

Number Of Ingredients 20

5 sun-dried tomatoes (not oil-packed)
2 teaspoons olive oil
1 1/2 cups red onions, chopped
2 teaspoons garlic, minced
1 1/4 lbs extra- lean ground turkey
8 ounces Italian turkey sausage
1 cup zucchini, grated and loosely packed
1 (700 ml) jar pasta sauce (I use Classico)
1 (19 ounce) can stewed tomatoes, undrained and chopped
1 tablespoon dried Italian seasoning
1 tablespoon balsamic vinegar
1 tablespoon brown sugar
1/4 teaspoon ground black pepper
1/4 cup fresh basil leaf, minced
2 cups light ricotta cheese
2 ounces feta cheese with herbs, crumbled
1 (10 ounce) package frozen spinach, thawed, squeezed dry and chopped
1 large egg
12 whole wheat lasagna noodles
1 1/2 cups mozzarella cheese, packed (Use a 3 or 4-cheese blend if available)

Steps:

  • Pour 1/2 cup boiling water over the sun-dried tomatoes and let soak while you prepare the sauce.
  • To make the sauce, heat the olive oil over medium-high heat in a large pot.
  • Add the onions and garlic.
  • Cook and stir until the onions have softened, about 4 minutes.
  • Add the ground turkey and sausage, breaking up any large pieces.
  • Cook until the meat is no longer pink.
  • Add the zucchini and cook for 2 minutes.
  • Add all of the remaining ingredients except for the fresh basil.
  • When the sun-dried tomatoes are soft enough, drain and chop them finely and add to the sauce.
  • Bring the sauce to a boil.
  • Reduce the heat to low and simmer, covered, for 20 minutes.
  • Stir in the minced basil and remove from the heat.
  • Combine the ricotta, feta, spinach and egg in a medium bowl and mix well.
  • Refrigerate until ready to use.
  • Cook the lasagna noodles according to package directions and drain well.
  • Preheat the oven to 375 degrees F.
  • Grease a deep 9" x 13" baking dish and spoon some meat sauce over the bottom of the dish.
  • Arrange 4 noodles over the sauce and layer as follows: 1/3 meat sauce, 1/2 shredded cheese, 4 noodles, 1/3 meat sauce, all of the ricotta/spinach mixture, 4 noodles, the remaining meat sauce and the remaining shredded cheese.
  • Cover loosely with foil and bake for 30 minutes.
  • Uncover and bake 10 more minutes.
  • Let lasagna stand for 10 minutes before serving.

SOUTHERN FRIED FRENCH TOAST

Southern Fried French Toast image

My mom used to make fried french toast on special occasions, it was a family favorite. It has a nice crispy coating on the outside. I like a good loaf of thick cut French bread for this.

Time 30m

Yield 2-4 serving(s)

Number Of Ingredients 8

1 cup flour
1 teaspoon baking powder
4 eggs
1/2 cup milk
1 teaspoon vanilla
1/4 teaspoon cinnamon
8 slices French bread
oil, to fry

Steps:

  • Mix the flour and the baking powder together.
  • Add the eggs and mix until it a smooth paste.
  • Add milk gradually until it reaches the consistency of pancake batter.
  • Add vanilla and cinnamon.
  • Heat a frying pan with 1/2" of oil over medium heat.
  • Dip pieces of bread into the batter.
  • Gently place the bread into the oil, fry until golden on each side.
  • Drain on paper towels and sprinkle with powdered sugar.
  • Serve with warm syrup and butter.
  • I use Ming Tsai's 8-Spice Powder instead of cinnamon, it's got cinnamon, allspice, anise, cardamom, ginger, fennel, clove and cumin in it.
  • I got mine at Target, it adds a very exotic flavor.

Tips:

  • Use day-old bread for the best French toast. This will help the bread to soak up the egg mixture and cook evenly.
  • Don't overcrowd the pan when cooking the French toast. This will cause the bread to steam instead of fry and will result in soggy French toast.
  • Cook the French toast over medium heat. This will help to prevent the bread from burning.
  • Flip the French toast only once. Flipping it too often will cause the bread to break.
  • Serve the French toast immediately with your favorite toppings. This could include butter, syrup, fruit, whipped cream, or powdered sugar.

Conclusion:

French toast is a delicious and versatile breakfast dish that can be enjoyed by people of all ages. It is easy to make and can be customized to your liking. Whether you like it simple or topped with your favorite fruits and whipped cream, French toast is a great way to start your day.
