Yield 6-8 serving(s)

Number Of Ingredients 11

1/4 cup butter
5 large onions, chopped
5 cups beef broth
1/2 cup celery leaves
1 large potato, sliced
1 cup dry white wine
1 tablespoon vinegar
2 teaspoons sugar
1 cup light cream
1 tablespoon minced parsley
salt and pepper

Steps:

  • Melt butter in large saucepan.
  • Add chopped onions and mix well.
  • Add beef broth, celery leaves and potato.
  • Bring to boiling.
  • Cover and simmer for 30 minutes.
  • Puree mixture in a blender.
  • Return to saucepan and blend in wine, vinegar and sugar.
  • Bring to boiling and simmer 5 minutes.
  • Stir in cream, parsley and salt and pepper to taste.
  • Heat thoroughly but do not boil.

Tips:

  • Use a variety of onions: This will give your soup a more complex flavor. Try using yellow onions, white onions, and shallots.
  • Caramelize your onions: This will bring out their natural sweetness and give your soup a rich, golden color. To caramelize onions, cook them over low heat in a little bit of butter or oil until they are soft and brown.
  • Use a good quality white wine: The wine you use will have a big impact on the flavor of your soup. Choose a white wine that you enjoy drinking on its own.
  • Don't boil the soup: Boiling the soup will make it cloudy and will also drive off the alcohol from the wine. Bring the soup to a simmer and then reduce the heat to low. Let it simmer for at least 30 minutes, or until the flavors have melded together.
  • Serve the soup with a variety of toppings: This will allow your guests to customize their own bowls of soup. Some popular toppings include croutons, grated Parmesan cheese, and chopped fresh herbs.

Conclusion:

Onion white wine soup is a delicious and easy-to-make soup that is perfect for a cold winter day. With its rich, flavorful broth and variety of toppings, this soup is sure to please everyone at your table. So next time you're looking for a comforting and satisfying soup, give onion white wine soup a try.
