TURKISH STUFFED FLATBREAD (GOZLEME)

Turkish Stuffed Flatbread (Gozleme) image

This yeasted dough is so soft and easy to work with. I don't really like kneading by hand, so I used a bread machine instead for the kneading part only. You can stuff it with whatever fillings you like or leave it unstuffed. Great for snacking or a side dish.

Time 1h20m

Yield 6

Number Of Ingredients 14

1 cup lukewarm water
1 teaspoon butter-flavored shortening
½ teaspoon salt
1 teaspoon white sugar
2 ⅓ cups bread flour
1 teaspoon yeast
1 tablespoon olive oil
1 tablespoon butter
½ medium onion, chopped
½ teaspoon salt
1 ½ cups frozen chopped spinach - thawed, drained, and squeezed dry
½ teaspoon garlic, minced
6 tablespoons grated Parmesan cheese
2 tablespoons olive oil, or as needed

Steps:

  • Place lukewarm water, shortening, salt, sugar, bread flour, and yeast in a bread machine in the order listed. Run Dough cycle. Remove dough from the machine at the kneading, 20 minutes.
  • Divide dough into 5 pieces and roll them into balls. Place on a floured surface, cover with a slightly damp cloth, and leave to rest for 20 to 30 minutes.
  • Meanwhile, melt oil and butter for filling in a medium skillet over medium heat. Add onion and salt and cook, stirring frequently, until onions soften, about 10 minutes. Add spinach and garlic and cook for another 3 to 5 minutes. Remove from the heat.
  • Roll dough circles into flat rounds, 5 to 6 inches in diameter. Fill one half each circle with spinach mixture, sprinkle with Parmesan cheese, then fold the other half over and seal the edges.
  • Preheat a griddle or large frying pan over medium-high heat. Brush one side of each gozleme with oil and place on the hot pan; cook until base is golden, 2 to 3 minutes. Brush top side with olive oil, turn, and cook until golden, another 2 to 3 minutes.

STUFFED ONIONS

Stuffed onions image

Soft, caramelised, oven-roasted onions stuffed with minced lamb and creamy Greek yogurt, a main course with a difference that's delicious with vegetable pilaf

Provided by Miriam Nice

Categories     Side dish

Time 1h40m

Number Of Ingredients 13

4 very large onions
2 tbsp olive oil
2 tbsp pomegranate molasses
50g Greek yogurt
50g fresh breadcrumbs
400g lamb mince (20% fat)
1 egg , beaten
1 tsp ground allspice
½ tsp ground cinnamon
1 tsp ground cumin
1 tsp ground coriander
½ small pack mint , chopped
½ small pack flat-leaf parsley , chopped

Steps:

  • Trim the very ends of the onions. Make an incision in each, from top to root, then another 0.5cm along, so you can cut out and discard a thin wedge (like you're discarding a segment of orange). Bring a pan of water to the boil and add the onions. Boil for 10 mins, remove from the water and let cool. Heat oven to 200C/180C fan/gas 6.
  • When the onions are cool enough to handle, carefully peel and set aside their outer layers - you want about 12-16 large layers in total, which will become the outer casing for the lamb filling. You can use the smaller, leftover layers in the middle for another recipe.
  • Mix all the stuffing ingredients in a bowl and season well. Shape into 12-16 oval meatballs. Put each one on an onion layer and roll it up to create what looks like a small, peeled onion.
  • Pour half the olive oil into a large, shallow casserole dish or roasting tin, then arrange all the stuffed onions on top in a tight, single layer. Drizzle over the remaining oil and bake for 45 mins. Brush with the molasses and bake for another 15-20 mins until the casings are really soft and dark golden brown. Serve with the root vegetable rice and the herby yogurt dressing on the side.

Tips:

  • Choose the right onions: Yellow onions are the most commonly used for stuffing, as they have a mild flavor that won't overpower the other ingredients. However, you can also use white or red onions if you prefer their flavor.
  • Slice the onions thinly: This will help them cook evenly and prevent them from becoming too chewy.
  • Sauté the onions until they are soft and translucent: This will bring out their sweetness and caramelize them slightly.
  • Season the onions well: Salt, pepper, garlic powder, and onion powder are all good choices.
  • Use a variety of cheeses: A combination of mozzarella, cheddar, and Parmesan cheese will give the stuffed flatbread a rich and flavorful filling.
  • Don't overload the flatbread with toppings: Too many toppings will make the flatbread difficult to fold and cook evenly.
  • Bake the flatbread until the crust is golden brown and the cheese is melted and bubbly: This will ensure that the flatbread is cooked through and the cheese is gooey and delicious.

Conclusion:

Onion stuffed flatbread is a delicious and easy-to-make appetizer or main course. With just a few simple ingredients, you can create a flavorful and satisfying dish that is sure to please everyone at the table. So next time you're looking for a quick and easy meal, give onion stuffed flatbread a try. You won't be disappointed!
