1/4 cup olive oil, plus 2 tablespoons
1 pound okra, tops and tails trimmed
Salt and pepper, to taste
2 1/2 cups onion, julienned
3 cloves garlic, sliced
12/ teaspoon Greek oregano (dry)
1/4 teaspoon Aleppo (dried, lightly salted, crushed turkish chiles)
2 cups canned whole tomatoes (crushed with juice)
1 cup Herb Tea (see recipe)
1/8 cup Kalamata olives, sliced
1/8 cup parsley, chopped
1 tablespoon extra virgin olive oil

Steps:

  • In a large saucepan heat 1 tablespoon olive oil. Add 1/2 the okra and saute until lightly seared, about 2 to 3 minutes. Season with salt and pepper. Reserve. Reheat pan, add 1 tablespoon olive oil and repeat with remaining okra. Reserve. In a heavy gauge saucepan heat remaining 1/4 cup olive oil and add onions. Season with a pinch of salt and cook until soft and translucent, about 8 to 10 minutes. Stir in garlic. Turn heat to medium and cook onions until lightly caramelized, about 2 more minutes. Add dry oregano and Aleppo, stir and cook for 1 minute. Add tomatoes, lower heat and cook for 5 to 6 minutes. Add seared okra and stir to combine. Add Herb Tea. Simmer on low heat for 15 to 20 minutes. When okra is slightly tender, fold in olives, parsley and olive oil. Adjust seasoning and serve.

  • In a large saucepan, brown stew meat in 1 tablespoon oil. Add garlic; cook and stir for 1 minute. Stir in the broth, wine, orange peel, salt and thyme. Bring to a boil. 2 1/2 lbs beef tips
1/4 cup all-purpose flour
salt & pepper
1 tablespoon olive oil
1 vidalia onion, very large (cut lengthwise and sliced very thinly)
1/2 cup beef broth
1/2 cup white wine (I use dry Vermouth for my white cooking wine)
1 tablespoon dried basil
1 (16 ounce) bag frozen lima beans (I prefer baby lima beans)
1/2 cup half-and-half
1 tablespoon cornstarch
1 (10 ounce) can refrigerated biscuits, 10 count

Steps:

  • Toss the beef tips with the flour, salt and pepper in a large Ziploc bag to coat well. Heat the olive oil in a large pot. Brown the beef in the pan. Once browned, reserve beef on a plate and cook the onions until soft. Return the beef to the pan, add the broth, white wine and basil to the pot. Turn down to a simmer, cover, and let cook for 2 hours (can cook for longer if necessary, just keep on low heat). Toward end of cooking time preheat oven to 350 degrees. Stir the lima beans into the stew. In a measuring cup mix the half-and-half with the cornstarch until the cornstarch is dissolved. Stir it into the stew. Turn heat up to medium-high and heat to almost boiling stirring regularly. Transfer stew to large 9 by 13 glass pan (I actually use a little larger corning ware pan) Open biscuits can and place individual biscuits on top of the stew. Cook in 350 degree oven for 15-20 minutes until biscuits are golden brown.

1 pinch pepper
1 dash Worcestershire sauce

  • Brown the onions and the flour in the butter in a saucepan.

3 lb beef, cut into 1/2-inch cubes
3 Tbsp unsalted butter
3 large yellow onions, finely chopped
1/4 cup all-purpose flour
4 cups low-sodium beef broth
3 bay leaves
4 whole cloves
4 juniper berries
10 whole black peppercorns
2 cardamom pods (or 1/2 tsp ground cardamom)
2 Tbsp red wine vinegar
salt, to taste
black pepper, to taste

Steps:

  • 1. Melt the butter in a Dutch oven over medium-high heat. Season the beef with salt and pepper, then brown the beef on all sides, working in batches so as not to overcrowd. Transfer browned beef to a plate and set aside. Leave the browned bits in the pan.
  • 2. Add the onions to the Dutch oven, adding more butter if needed, and cook until onions are caramelized, about 20 minutes. Add the flour and stir until combined. Add the browned beef to the onions, stir to combine, and cover with the beef stock just until covered. Add the seasonings and red wine vinegar, stir to combine.
  • 3. Increase the heat and bring the stew to a boil. Once it reaches a boil, reduce heat to low. Cover Dutch oven, and let it simmer for 2½ hours.

2 cups fresh mushrooms, sliced
2 pounds yellow onions halved and aliced about 1/4 inch thick (about 8 cups)
1 Tablespoon tomato paste
2 medium cloves garlic, minced (about 2 teaspoons)
3 Tablespoons all-purpose flour
3/4 cup low sodium chicken broth
3/4 cup low sodium beef broth
1-1/2 cups dark beer (12 ounce bottle or can)
1 teaspoon dried thyme
2 bay leaves
1 Tablespoon cider vinegar

Steps:

  • 1. Adjust oven rack to lower-middle position; heat oven to 300 degrees. 2. Dry beef thoroughly with paper towels, then season generously with kosher salt and pepper. Heat 2 teaspoons oil in large heavy-bottomed Dutch oven over medium-high heat; add beef and brown well. (May need to do this in 2 batches so beef can be browned in single layer.) Stir in broths, scraping pan bottom to loosen browned bits; stir in beer, thyme, bay leaves, vinegar, browned beef with any accumulated juices, mushrooms and salt and pepper to taste. (Carrots, too.) Increase heat to medium-high and bring to full boil, stirring occasionally; cover partially, then place pot in oven. Cook until fork inserted into beef meets little resistance, about 2 to 2- 1/2 hours. (I think I cooked my stew closer to 3 hours, until meat was super tender and the sauce was well-thickened ..I also stirred it occasionally while it was in the oven). 5. Discard bay leaves. Adjust seasonings with salt and pepper to taste and serve. I served the stew over mashed potatoes. Creamy, dreamy, marvelous mashed potatoes Good grief. I dare you not to lick your plate. Serve with salad.

1 pound okra, tops and tails trimmed

2 1/2 cups thinly sliced yellow onion (about 2 medium-size onions)
3 garlic cloves, thinly sliced
1/2 teaspoon dried Greek oregano
1/4 teaspoon Aleppo (dried, lightly salted, crushed Turkish chiles)
2 cups canned whole tomatoes, crushed, reserving juices
1 cup homemade or low-sodium canned chicken stock
2 tablespoons sliced and pitted kalamata olives
2 tablespoons finely chopped fresh flat-leaf parsley

Steps:

  • In a medium stockpot, heat 1 tablespoon olive oil over medium-high heat. Add half of the okra, and cook until color begins to change, 2 to 3 minutes. Season with salt and pepper. Remove from pan, and set aside. Add 1 tablespoon oil to pan, and repeat with remaining okra.
  • Add remaining 4 tablespoons oil, and heat. Add onions and a pinch of salt. Cook, stirring occasionally, until soft and translucent, 8 to 10 minutes. Add garlic, reduce heat to medium, and cook until onions are lightly caramelized, about 2 minutes. Stir in oregano and Aleppo pepper, and cook 1 minute.

5 garlic cloves
3 tablespoons sherry vinegar
3 tablespoons olive oil, more as needed for frying
2 pounds spicy fresh (uncured) chorizo, pricked all over with a fork
1 8-inch baguette, sliced about 1/4 inch thick
Kosher salt, to taste
1/4 teaspoon sweet paprika
1/4 teaspoon smoked or hot paprika
2 large red onions, halved lengthwise and sliced
2 Spanish onions, halved lengthwise and sliced
2 green bell peppers, sliced
2 red bell peppers, sliced
2 pints grape or cherry tomatoes, halved if large
1 cup chicken broth
1/2 teaspoon freshly ground black pepper
1 bay leaf
1 bunch cilantro, leaves chopped

Steps:

  • Mince 4 garlic cloves and reserve. Mince remaining garlic clove, put it in a small bowl and cover with 1 tablespoon sherry vinegar.
  • Heat 1 tablespoon oil over medium-high heat in a very large skillet or Dutch oven. Add chorizo and cook until browned all over, about 7 minutes. Transfer chorizo to a plate.
  • Add as many bread slices to pan as will fit in one layer. Cook until golden on both sides, about 2 minutes. Transfer croutons to a plate and sprinkle with salt. Heat a little more oil in pan and repeat with remaining bread slices, frying them in batches if necessary.
  • Heat remaining 2 tablespoons oil in pan. Add both paprikas and let cook for 20 seconds. Add onions and reserved 4 cloves minced garlic and cook until limp, about 3 minutes. Add bell peppers and sauté until onions are golden and peppers soft, about 7 minutes. Add cherry tomatoes, chicken broth, black pepper and bay leaf to pan and bring to a simmer. Cut chorizo in chunks and add it to pan along with any drippings from plate. Reduce heat to low, cover pan, and let cook at a low simmer for 25 minutes. Add remaining 2 tablespoons sherry vinegar to pan and simmer uncovered, until stew thickens slightly, 5 to 10 minutes longer.
  • Remove bay leaf and stir in reserved garlic-vinegar mixture and cilantro. Serve stew topped with croutons.

6 onions, chopped
5 tablespoons butter
3 cups of cold water
1 egg yolk
3 tablespoons flour
2 cups whole milk
salt
cayenne pepper
1 cup of grated edam cheese

Steps:

  • In a large soup kettle, saute onions in the butter for five minutes or until transparent.
  • Remove kettle from the burner.
  • Sprinkle flour over the onions and stir in with a wire whisk.
  • Slowly add water stirring with the whisk continuously to avoid lumps.
  • Return to burner and simmer on medium low for about 30 minutes, stirring frequently.
  • Blend small quantities at a time in a food processor or blender and return to soup kettle.
  • Slowly add milk, stirring with the whisk.
  • Beat the egg yolk briefly with the whisk.

  • Add to soup kettle and heat through.
  • Avoid boiling.

2 pounds small boiling onions
6 Tbs EVO
6 Chicken leg and thigh pieces (cut apart)
1 28 oz can of diced tomatoes in juice
1 can low salt chicken broth
1/2 cup dry white wine
1 tbs coriander
1 tsp honey
1 tsp allspice
1 tsp coursely ground black pepper
2 bay leaves
peel of 1 orange, removed in strips using vegie peeler
1 cinnamon stick
1 tsp dry oregano

Steps:

  • Combine raisins and vinegar in bowl set aside. Cook onions in large sauce pan of boiling water for 5 minutes, drain, cool and trim and peel. Preheat oven to 350. Heat 3 tbs EVO in large ovenproof pot over medium low heat. Add onions, and saute until golden (10 minutes). Move to large bowl. Sprinkle Chicken with salt and pepper, at 1 tbs EVo to pot, cook chicken in batches until golden brown - 5 minutes per side. Add chicken to bowl withj onions. Add tomatoes andjuice, broth, wine, all spice, coriander, honey, and 1 tsp pepper to pot. Boil, scraping brown bits. Add bay leaves, orange peel, cinnamon stick and oregano, chicken and onions. Cover tightly and bake for about an 1 hour. Stir in raisin mixture, season and serve.

5 garlic cloves
3 tablespoons sherry vinegar
3 tablespoons olive oil, more as needed for frying
2 pounds spicy fresh (uncured) chorizo, pricked all over with a fork
1 8-inch baguette, sliced about 1/4 inch thick
Kosher salt to taste
1/4 teaspoon sweet paprika
1/4 teaspoon smoked or hot paprika
2 Spanish onions halved lengthwise and sliced
2 green bell peppers, sliced
2 red bell peppers, sliced
2 pints grape or cherry tomatoes, halved if large
1 cup chicken broth
1/2 teaspoon freshly ground black pepper
1 bay leaf
1 bunch cilantro, leaves chopped

Steps:

  • 1. Mince 4 garlic cloves and reserve. Mince remaining garlic clove, put it in a small bowl and cover with 1 tablespoon sherry vinegar. 2. Heat 1 tablespoon oil over medium-high heat in a very large skillet or Dutch oven. Add chorizo and cook until browned all over, about 7 minutes. Transfer chorizo to a plate. 3. Add as many bread slices to pan as will fit in one layer. cook until golden on both sides about 2 minutes. Transfer croutons to a plate and sprinkle with salt. Heat a little more oil in pan and repeat with remaining bread slices, frying them in batches if necesssary. 4. Heat remaining 2 tablespoons oil in pan. Add both paprikas and let cook for 20 seconds. Add onions and reserved 4 cloves minced garlic and cook until limp, about 3 minutes. Add bell peppers and saute until onions are golden and peppers soft, about 7 minutes. Add cherry tomatoes, chicken broth, black pepper and bay leaf to pan and bring to a simmer. Cut chorizo in chunks and add it to pan along with any drippings from plate. Reduce heat to low, cover pan and let cook at a low simmer for 25 minutes. Add remaining 2 tablespoons sherry vinegar to pan and simmer uncovered until stew thickens slightly 5 to 10 minutes longer. 5. Remove bay leaf and stir in reserved garlic-vinegar mixture and cilantro. Serve stew topped with croutons.

2/3 cup water
3 medium carrots, cut into 3/4-inch chunks
2 medium potatoes, peeled and cut into 1-inch chunks
1 medium onion, cut into thin wedges
1 tablespoon minced fresh parsley

Steps:

  • In a large bowl, combine the egg, bread crumbs, garlic, salt and savory. Crumble beef over mixture and mix well.
