Categories     dinner, pastas, main course

Time 45m

Yield 6 servings

Number Of Ingredients 11

1/4 cup extravirgin olive oil
3 large onions, thinly sliced
3 cups canned Italian imported tomatoes, drained, or 1 1/2 to 2 pounds very ripe plum tomatoes, seeded and chopped
4 medium size sweet red or green peppers, seeded and cut into thin 2-inch strips
1/4 cup chopped fresh basil leaves (or 1 tablespoon dried basil)
2/3 cup pitted Italian or Greek olives, chopped
1/4 cup capers, drained and chopped if very large
Salt
Freshly ground black pepper
1 pound spaghetti
Freshly grated Parmesan cheese, if desired

Steps:

  • Heat oil in a large saucepan or in a flame-proof casserole that will hold all ingredients, including cooked spaghetti, and can go to the table. Add onions and cook over medium heat, stirring constantly, until soft but not brown.
  • Add tomatoes. If using canned tomatoes, break up with a fork. Cook for 3 minutes. Add peppers and basil and cook over low heat, stirring frequently, for about 15 minutes, or until peppers are almost but not quite tender. Stir in olives and capers, cover and cook for 5 more minutes. Taste and season with salt and pepper if desired.
  • Bring 4 quarts of water to a rolling boil and add 1 tablespoon salt. When water reboils, add pasta and stir vigorously with a long-handled wooden spoon or fork to separate pasta strands and bring water quickly back to a boil. Cook until pasta is al dente.
  • Drain pasta and turn into the casserole with the sauce. Toss to mix and serve immediately, passing the Parmesan separately if desired.

CARAMELIZED ONION SPAGHETTI SQUASH CASSEROLE RECIPE - (3.9/5)

CARAMELIZED ONION SPAGHETTI SQUASH CASSEROLE Recipe - (3.9/5) image

Provided by sz8jm9

Number Of Ingredients 10

1 medium spaghetti squash
2 cups (2 medium) chopped yellow onions
1 cup chopped baby Portobello mushrooms
1 cup tomato sauce
1/2 cup water
2 tablespoons extra-virgin olive oil + extra to coat pan
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper
3 eggs, whisked

Steps:

  • 1. Preheat the oven to 400°F and grease an 8x8 casserole dish with olive oil. 2. Cut the spaghetti squash in half lengthwise, scoop out the seeds and place the squash cut-side down on a baking sheet. Bake for 45 minutes, until the skin of the squash is fork tender. 3. While the squash is baking, prepare the caramelized onions and mushrooms. Heat the olive oil in a frying pan over medium-high heat, then add the onions and mushrooms. Lower the temperature to medium and cook the onions and mushrooms until beginning to brown, stirring occasionally to prevent burning, for around 10 minutes. Add the water to the pan and stir the onions and mushrooms to pick up the brown bits in the bottom of the pan. Cook the onions and mushrooms for 8-10 minutes, until there is no more water in the pan. 4. Remove the squash from the oven, scoop out the flesh and place it in the casserole dish. Stir in the caramelized mushrooms, onions, tomato sauce and garlic powder. Add the whisked eggs to the baking dish and mix everything together until you can no longer see the eggs. 5. Bake uncovered for 1 hour in the oven, until the top of the casserole has formed a crust that looks like cheese and is brown around the edges. Let rest for 10 minutes before serving.

Tips:

  • Use high-quality spaghetti: Opt for a good quality spaghetti brand made with durum wheat semolina for the best texture and flavor.
  • Don't overcook the spaghetti: Cook the spaghetti according to the package instructions, checking for doneness a minute or two before the recommended time to ensure it retains a slight bite.
  • Sauté the onions properly: Cook the onions over medium heat, stirring frequently, until they are soft and caramelized. This process can take about 15-20 minutes, but it's worth the time for a rich and flavorful onion base.
  • Use a flavorful cheese: Choose a cheese that will melt well and add a distinct taste to the dish. Parmesan, Pecorino Romano, or Asiago are all great options.
  • Add some herbs for extra flavor: Fresh herbs like basil, parsley, or oregano can add a pop of brightness and freshness to the spaghetti. Stir them in just before serving.

Conclusion:

Onion spaghetti is a simple yet satisfying pasta dish that showcases the sweet and savory flavors of caramelized onions. It's a versatile recipe that can be easily customized to your preferences, whether you prefer a more garlicky or cheesy version. With its minimal ingredients and quick preparation time, this dish is a perfect weeknight meal or a comforting lunch option. So next time you're looking for a quick and flavorful pasta fix, give onion spaghetti a try – you won't be disappointed!
