Time 1h15m

Yield 4 serving(s)

Number Of Ingredients 10

3 tablespoons butter
2 tablespoons fresh thyme, chopped
3 sweet onions, sliced
3/4 cup cheddar cheese, shredded
1/4 cup milk
1/4 cup 35% cream
4 large eggs
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon nutmeg

Steps:

  • Melt butter in a large fry pan. Add thyme and onion, saute over medium heat for 15-20 minutes or until onions are golden brown.
  • Add onions to a buttered quiche pan. Cover with cheese.
  • In a mixing bowl whisk together milk, cream, egg, salt, pepper, and nutmeg.
  • Pour over onions and cheese.
  • Cook at 425 degrees for 20-25 minutes or until crust is golden brown and a knife inserted in the centre comes out clean.

Tips:

  • Use a good quality onion. A sweet onion, such as Vidalia or Walla Walla, will give the quiche the best flavor.
  • Slice the onions thinly. This will help them cook evenly.
  • Caramelize the onions before adding them to the quiche filling. This will give them a deeper flavor and make them more tender.
  • Use a combination of cheeses. This will give the quiche a more complex flavor.
  • Don't overcook the quiche. The center should be set but still slightly jiggly.
  • Let the quiche cool for at least 15 minutes before slicing and serving. This will help it to set and make it easier to slice.

Conclusion:

This crustless onion quiche is a delicious and easy-to-make dish that is perfect for breakfast, lunch, or dinner. It is also a great way to use up leftover onions. With its simple ingredients and straightforward instructions, this quiche is sure to become a favorite in your kitchen.
