BONNIE'S POTATO AND ONION PIE
This is a great side dish with tons of flavor, and easy to prepare. The smell is fantastic! (No crust to make) Great served with chicken on the spit and a tossed green salad. Sliced potatoes and onions cooked in sour cream and cheese of your choice. I hope you try this side dish! Enjoy!

Steps:
- 1. Cook's Tip: A word about cheese. I use jack cheese, fontina, gruyere cheese, cheddar, but I like fontina and jack cheese the best. For the milk mixture, I use a combination of sour cream, heavy cream and 2% milk, which is what I had on hand. You can use all milk, or all cream, or mix it up. Use what you like. Experiment to your hearts content. This is a fun recipe for that!
- 2. Pre-heat the oven to 375 degrees. Spray a 10 inch glass pie dish with Pam.
- 3. Scatter 2 teaspoons of garlic on bottom of Pam sprayed pie dish. Put half of the sliced potatoes on top of the garlic, overlapping the slices. Add half of the onion slices. Add salt and pepper (go easy on the pepper) Sprinkle 1/3 cup of cheese (your choice) over the onions evenly. Repeat the layer of garlic, potatoes, onions, and salt, pepper. Add the milk mixture evenly over the top, and then add the remaining 2/3 cup of cheese of choice, plus, the 1/4 cup of parmesan cheese.
- 4. Cover the pie with foil and bake 30 minutes, uncover and bake 30 minutes more. You may want to do a low broil to brown the top. Cut into wedges to serve. Enjoy!

ONION POTATO PIE
Steps:
- Gently squeeze potatoes to remove excess water. Melt 5 tablespoons butter; add to potatoes along with 1/2 teaspoon salt. Press in bottom and up sides of a greased 9-in. pie plate to form a crust. Bake at 425° for 25-30 minutes or until edges are browned. Cool to room temperature. , In a saucepan over medium heat, saute the onion and red pepper in remaining butter until tender, about 6-8 minutes. Spoon into crust; sprinkle with cheese. Combine the eggs, milk and remaining salt; pour over onion mixture. , Bake at 350° for 20-25 minutes or until a knife inserted in the center comes out clean. Let stand 5 minutes before serving.

This is a good fall dinner recipe that is sort of a pie--I originally finished my concoction before everyone got home! If you want, you can skip a few steps and this can be served as two dishes. Also, I do make this with chicken apple sausage, but I think it would be just as good with smoked turkey sausage. I hope that you like it!

- Preheat the oven to 350 degrees F.
- Boil the potatoes in salted water until fork tender.
- Heat the oil in a skillet and saute the garlic, onion, and apple until slightly carmelized and the apple is starting to soften.
- Keep the potatoes warm if they are cooked.
- Put the onion mixture in a medium bowl and keep warm. Add additional oil to the pan if needed and slightly brown the sausage.
- Mix the sausage with the onion mixture and the celery salt, thyme, pepper, salt, and wine/cider.
- Put the sausage mixture into a pie plate.
- Mash the potatoes with the butter, milk, sour cream, salt, and parsley.
- Top the pie with the mashed potatoes and seal the edges with the potatoes. Spray lightly with the cooking spray, if you want.
- Bake for 45 minutes or until the potatoes are starting to brown.
- Let cool for 5-10 minutes before serving.

Steps:
- Preheat the oven to 180°C fan forced (200°C normal)/350°-375°F/4-5 gas mark.
- Heat a little oil in a heavy-based - preferably non-stick - pan and gently sauté the onions, spring onions and leek until softish, stirring now and again; remove the pan from the heat; add the minced garlic and thyme to the pan and mix to combine the ingredients.
- Combine all the tasty cheese with the crème fraiche or sour cream.
- Place several layers of potato in the base of a well-greased round oven dish and season well with sea salt and freshly ground black pepper; top with half of the sautéed onions, leek and garlic; add several dollops of the cheese mixture (there is no need to spread this out as the cheeses will spread out as the pie starts to cook and the cheeses melt); repeat these steps, ending with the cheese layer.
- Cut a round of pastry to cover and slightly overlap the dish in which the pie is to be cooked.
- Beat together the egg and milk; brush the outside edges of the dish just below the rim with the egg wash and place the pastry round on top of the pie, overhanging the edge of the dish; press down the sides of the pastry onto the sides of the dish and brush the top of the pie and the overlapping edges of the pastry with the egg wash.
- Cook the pie in the lower part of the oven for about 30 minutes or until the pastry is golden brown.
- Serve the pie with a salad greens.
STILTON, ONION AND POTATO PIE

- 1. Peel and boil potatoes until tender 2. Put some oil and a big blob of butter in a pan and slowly cook onions until thoroughly soft and sticky, this will take about the same time as the potatoes 3. Drain the potatoes and mash the potato with some milk 4. Butter a dish (Nigel and I both used a 28cm metal handled frying pan) 5. Spoon in half the potato, level out and add the onions and a dash of pepper. Crumble the stilton over the onions and then cover with the remaining half of mash and smooth out. 6. Sprinkle the parmesan over evenly, and garnish with some slices of tomato. 7. Cook at 200C/400F/GM 6 until the top is golden (20-30 minutes). 8. Serve on blanched whole savoy cabbage leaves.
POTATO, ONION, CHEDDAR UPSIDE DOWN PIE
I have seen some different versions of the potato tart floating around, so of course I had to jump on the band wagon. There is nothing better than some oven cooked "fried" potatoes, than oven cooked "fried" potatoes with onion and cheese. This was off the hook delicious. And of course I couldn't stop there, I made a "queso"...

Steps:
- 1. The number of potatoes will depend on their size. I used red potatoes, but Yukon gold or russet would work fine too. Slice potatoes and onion very thin by hand or using your mandolin.
- 2. I used a cast iron skillet. I drizzled about 2 tbs. of olive oil in the bottom and brushed it around to cover well. Then I sprinkled black pepper and Mrs. Dash original blend in the bottom of the pan to suit my taste. Next layer slices of onion in the bottom.
- 3. Then I added a generous layer of potatoes, re-seasoned with Mrs. Dash.
- 4. Then a generous layer of cheddar.
- 5. Then another layer of potatoes with Mrs. Dash and a little drizzle of olive oil. Place an oven proof lid on and bake at 375° for 30 min., remove lid and bake another 20 min. or until fork slides in easily.
- 6. Let stand for about 10 min. then loosen sides with a spatula, and run it under potatoes to make sure they are not stuck to bottom. Then invert onto plate.
- 7. Next I decided to make a topping for them. I had planned to do a juicy roasted tomato and Thai chili sauce, but ended up adding sour cream and cilantro too.
- 8. First I cut enough cherry tomatoes in half to fill up my small non stick skillet, about 1/2 pint. I drizzled with olive oil and let them cook for about 20 min.
- 9. Once they were somewhat caramelized on the bottom I added 4 oz. of sour cream, 1 tbs. Thai chili sauce and 1/2 c. chopped fresh cilantro. Then I poured it onto the potatoes and spread it out. Super delicious!!!!
Tips:
- Use a sharp knife to slice the onions thinly. This will help them cook evenly.
- Don't overcrowd the pan when cooking the onions. If you do, they will steam instead of caramelizing.
- Cook the onions over low heat until they are golden brown. This will take about 30 minutes.
- Use a good quality puff pastry for the crust. This will make a big difference in the final product.
- Don't overfill the pie. If you do, it will be difficult to seal the crust.
- Bake the pie for 30-35 minutes, or until the crust is golden brown.
